 As much as the "chronologically prior to the end of the game" model for DLC has become standard, another fun option might be suggested by the successful standalone stories GRR Martin did within his Song of Ice and Fire universe - The Hedge Knight and The Sworn Sword.

They took place decades prior to the events of the main series, casting indirect light on what one might call the "high fantasy" plotlines, combining an "important" character with one from humble origins.  I really liked how it was done; and a fantasy universe like that of DA:O suggests obvious opportunities to do the same sort of thing with Fereldan history and so on.
