My favorite fantasy gameplay was in Baldur's Gate. It was positively obtuse; no useable hotkeys whatsoever, no exact healthbars for enemies, no AoE indicators. But it worked really well.
My issues with the DA:O combat system are thus:
-Party AI with limited tactics slots. And REALLY stupid AI at that. BG 1 had better AI and it was a decade older!
-Balance issues. Mages >>>>>>>> every other class. Ranged weapons are worthless. Half of the skills are unusable.
-Having to carry around stacks of consumables. Consumables should be an emergency item, not the primary means of staying alive.
Most of all: it had KOTOR's gear system. Carrying around fifty kinds weapons and armor that you will never use is not a good thing. Level/stat requirements are not a good thing for non-MMOs. PS:T, BG, and IWD got inventory right. And then Bioware stumbled down the dark path of KOTOR. Fallout and Diablo are other good examples they could have heeded, but they seem fixated on the annoying and micromanagement-intensive.
Yes, it fits the RPG genre. I guess. But there are other RPG systems that are sooo much better.
As an aside, I agree with your distaste of Skyrim's gameplay. It was far too stripped down, plus it neutered magic.

It is balanced so that if you just let things play out in realtime, your entire party gets ganked right away. Therefore you need to pause every 2 seconds to babysit your entire party... making it a weird mishmash of realtime and turn-based combat.
Plus, I'm playing as the Warden. I want to focus on the Warden... kinda like Mass Effect. I'm Shepard, I don't want to have to babysit Garrus and Ashley at the same time.
Werid we have different prefences. Yeah you do have to pause to plan out all your characters. But I still think it was very cool to be able to use everyone in you party. You basically get to play all the classes at one time.

Funny how your forced into a situation wherre you have to kill him.
You can not to but no more Blades. Kind of stupid kill the only NPC that has any real dialogue in the game. Everyone else in Skyrim sucked, truth to be told.

it was Diablo that made me have to quit gaming in the 90s. I got
addicted to it and had to go cold turkey. It's a little ironic that it doesn't
appeal anymore, being essentially a dungeon crawler. I'm not sure about
III but maybe I'm being too picky.

I didn't love it either. I guess I want to spend most of my time controlling the Warden and only jump to the others if they're doing something blatantly stupid. It doesn't help that the autolevelling (before you pick up the characters) is so bad. Once I started running around and picking everyone up ASAP and levelling them myself it was a little better.

Agreed. I actually enjoyed DAII, and that was mostly due to the phenominal efforts of the cast. The only main character I dislike is Carver. I'd even place Merrill, Aveline, Varric, and Fenris above most of DA:O's cast.
EDIT: I'd like to add some things to the actual purpose of the thread. FFX is great, as is Chrono Trigger/ Chrono Cross.
Maybe grabbing a GBA emulator and playing some handheld games would help, too. Fire Emblem, Metroid: Fusion, Golden Sun, etc. The GBA had a number of suprisingly good games. While not strictly RPGs, they're something to consider.

Edit: note: it still has it's flaws, but it's been improved since release. Too bad SEGA did decide there's no sequel
Edit #2: Of course The Witcher 1&2 (although Geralt is a bit oversexed
