So, between those three classes, it will mainly depend on how you value Tech talents against Biotics. Those three classes can go through Insanity in all three games, but there are some choke points in ME1 that can be tricky, but completable nonetheless.

How much experience do you have with ME1 combat? And I figure you would only like a single ME1 playthrough, so that you may immediately jump to ME2. I can give you some tips through all three games, and I have links in my sig that can also help.

ME1 combat needs you to micromanage a few pieces in your inventory on higher difficulties, and the highest difficulties will be locked out for you on your first playthrough, so you don't need to worry about that, it's more tedious really.
And your very first ME1 playthrough will also be hard capped at level 50.
Also, I recommend you focus on either Charm or Intimidate in ME1. You will gain 4 talent points as you fill either the Paragon or Renegade bar and so to have all choices of either Paragon or Renegade dialogue, you will need to invest 8 talent points to have them available.
So the only tricky part is to not over invest early, since the Paragon and/or Renegade bar need to keep filling to allow further investment in one of those two. Sorry if it's confusing, but I can provide links with some info from the wiki.
Lastly, I can detail how to overcome certain tricky parts and provide links to walkthroughs for missions and assignments that should be helpful.
