Or a brand brand new tilesets altogether to replace them if you recommend it it. That pretty much says it all, I havent really been able to find any tilesets to replace them.

You could use Six's Wild woods tileset for a forest.
In about two months I will upload a rural tileset derived from tiles from the Medieval city tileset with the addition of mountains, villages, coasts and a two townwall crossers different from the ones in the city tileset. Possibly palisades, too.

I use Wild Lands and Wild Woods by sixesthrice in place of the two default tilesets that you mention.

Also good is Tom Banjo's forest which Baba Yaga here on the boards was working on improving. If you go with Tom Banjo's forest I recommend simply using the Castle Rural tileset for your rural needs.

Project Q has expanded the Castle Rural tileset (and a number of others) in wonderful ways. Highly recommended.
