How long has it been since the end of Mass Effect 1 to where the Collectors attack the Normandy at the beginning of Mass Effect 2?
Time gap between end of ME1 and beginning of ME2?

Not long, I think. I can't recall exactly where I heard it but I seem to recall some dialogue somewhere that implied it was only two or three months or so.
