Always Liara and Garrus. In ME2 I took Thane and Garrus.

ME1: Garrus and Tali all the time. They are my absolute favorite characters.
ME2: Garrus and Grunt/Mordin (until I get Tali)
ME3: Garrus and Liara (until I get Tali.)

There's no one I'd rather have by my side than Garrus and Tali.

Gotta love Garrus. Now if ME3 had just let me run with the "Dream Team" of Garrus and Wrex that would have made the game immensely better. I mean one part of my brain would be like "Liara doesn't wear a helmet..." but then another part of my brain would be like "OMG STFU! Garrus and Wrex bro! GARRUS AND WREX!!!" Sadly there were no temporary squadmates at all.

Garrus and Liara in ME1 and 3 because they combine beautifully with any Shepard. Soldier/Infiltrator/Vanguard? Sure, you have Tech and Biotic powers aplenty from your squad. Adept/Sentinel/Engineer? Sure, set up Tech/Biotic combos and have Garrus for heavy fire support against all targets.

In ME2 I used Garrus as well (Again, he's able to deal with just about any kind of enemy) and rotating the second squadmate depending on the enemy (Tali for fighting geth, Samara for fighting Collectors, and either one of them for fighting Mercs).

Really depends what class my Shepard is. But generally I'd like to have 1 tech ( drone ) and 1 bio ( singularity ) in my team.

ME1: Wrex (No matter what, there is ALWAYS Wrex in my squad) and I guess Garrus (Every alien is awesome in ME1)
ME2: Garrus and Mordin (Legion is gained too late to be counted in sadly, and Grunt and Zaeed is awesome)
ME3: Garrus and Liara. (Javik if I want a troll playthrough).

It's different for each Shepard. I usually take the LI and someone who complements them, but for my main Shep (Forever Alone)-

ME1: Ashley and Wrex/Garrus
ME2: Jack and Legion/Garrus
ME3: Javik and Garrus

Grunt was fun, But sometimes I'd take an all girls squad. Miranda, Jack, and even Kasumi sometimes

I honestly change it up regularly depending on what the mission objective is. Just force of habit from playing ME1, even though there's no benefit to it in ME2 and ME3.

In ME1 if I was expecting a straight up fight I'd often select from Garrus, Ashley, and Wrex. If it was mostly a tech mission, I'd select from Tali, Kaidan, or Liara. If I had no idea what to expect (most of the time) I'd pick one from each group, though from the brawn side, Garrus and Ashley got preference, and from the brain side, Tali and Kaidan got preference.

As far as tech experts, if it was something involving synthetics, Tali ALWAYS came along. If it was involving organics, Kaidan came along. I never really use Liara much. I love her as a character, but excepting Noveria where I bring her along because her mother is there, I always feel like I'm handing a scientist a gun and making her fight when she belongs on the ship. I try to stick with the people trained for it.

ME2, I gravitated toward Garrus, Zaeed, and Miranda primarily, but I'd drop one of them and bring Tali when the Geth were involved, and I'd bring Grunt often when on higher difficulties so he could smash his way through the really tough opponents. Interestingly, after the appearance DLC was released that allowed you to put Miranda in armor, I started using her more. Love her squadwide bonuses, but I always felt wrong bringing her into a firefight wearing a catsuit. Barriers go down and she'd just get turned into swiss cheese. I'd occasionally bring other folks to spice it up, but I found myself never using Thane, Jack, Kasumi, or Samara.

ME3, it was usually some combination of Garrus, Kaidan, and James. Liara would come along when it involved Protheans or Asari since I wanted her expert knowledge on hand, and Tali when it involved Geth. Javik came along for Priority: Tuchanka and Priority: Earth because he's such an anti-Reaper machine.
