Hmmm ... lemme think.
A nice place, somewhere on Earth / a colony. Maybe picknicking or a Café - in my headcanon, Ashley is a coffee addict. A bit talking, some romantic moments - and then, pack your stuff, move out to shooting range! Do a friendly competition. After that, next station - a nice little trip with a skycar to the biggest spaceport on the planet, watching ships coming and going ...
Alternatively: taking a small private yacht and show her the stars ...

Well my Jacob Shepard can only dream of in game Romance with Samara, No wonder I've taken up fanfic.
Can I say this when Samara takes his hand on the Citadel in ME3 and says the lame line of "Your time is precious, spend it wisely with those you care about"
To which he gets a chance to grab her pull her in close and they share a long deep kiss that when it's done
Samara "It seems we both still have our feelings for each other"
Shep "Samara if the Reapers destroy everything I don't want to be left with any regrets. I want to give Us a chance well we can, because tomorrow may very well never come."
That's all I've got right now, and dangit I'm still throwing my Fanfic WIP stuff up here for all to see
