I am so sick of reloading a save every time a mage successfully casts one of these spells on a member, since I can't do anything about it except wait for it to wear off. I know that chaotic commands can prevent most of this, but that is a level 5 spell and I'm not going to cast it EVERY TIME I meet a spellcaster just in case.
remedies for confusion, mental domination, feeblemind, etc.

Step 1 is read the notice at the top which says (No Spoilers Allowed) then post your question in the Bg1 or Bg2 forum... the spells and counters behave differently in the different games but a good start would be to do the quests in Tradmeet for a nice shield or a cool cloak from Beregost.

The point is that some of the easiest counters involve acquiring magic items. If you want to know where those are then you should post in a different forum.

well I was thinking more in terms of consumable items and buffs. There's a number of potions and scrolls I overlook, and there's 315 spells in this game. There's no way I'm going to familiarize myself with all of them.

You've mentioned chaotic commands. Another way to protect against virtually all disabling effects is using rage (berserker or barbarian). Improved invisibility stops your character being targeted with spells, but won't protect against area effects like horror and confusion. There are plenty of spells that give your saving throw a boost, such as chant, barkskin, blur and spirit armour.
Potion defenses include clarity, which gives immunity to a number of this type of spell. Magic shielding improves your saving throw enough to pretty much guarantee success, while invulnerability and stone form also give significant boosts. Magic protection gives magic resistance +50%, which may be enough to get some characters above 100%.

The Slayer is immune!
'Confusion', mental 'Domination' & others behave different in bg1 than they do in bg2... What game/ class are you playing?

Well, but if this is the first time you've played and you're reloading frequently anyway, it's a good time to experiment, so that you'll eventually come up with your own custom tailored list of favorite spells. If you like playing as a mage, you might then try the Sorcerer version where you get more shots from your own short spell list. Or, you could just pay attention to how long it takes to cast each of the higher level spells. Until you get to the point late in SoA where you have equipment that cuts down the interval between spell casts, there some advantage to loading your mages with fast casting spells that let them frequently forestall the opposition mages.
You can play this game as checkers, or you can play it as chess

In BG1 and BG2 as well as in their expansions, if you hit a mage with an arrow or the very good spell magic missile, their spell-casting is interrupted. And so they cannot cast the spell anymore. Just pummel the mages first with long-ranged weapons. In BG1 and BG2 is it a must that you'll need to take the mages out before doing anything else - mostly.

What is more, if poison is used, (poison arrows etc). It stops spell casting for a while unless the mage is protected in some way against poison.
