just started a play thru with an engineer on insanity and am wondering what the best squadmates and power set ups for me and them would be.

Liara/Javik - Good biotic-focused squad. Between Singularity and Drone/Cryo Blast/Sentry Turret (and Decoy, if you want to spec your bonus power for it) you'll be locking down hordes of enemies. Which is good because Liara is really fragile and Javik didn't seem any better, at least when I was playing.
Liara/Garrus - I actually ran with this on most missions and preferred it over Liara/Javik. Eventually I could talent Liara's cooldowns to be so small that she could back to back set up and detonate her own biotic combos. Garrus gave extra firepower with his rifles and area-denial with Proximity mine, and some small crowd control with Concussive shot.
Tali - Redundant if you are an engineer but watching an enemy get chain shocked into uselessness between your two drones is hilarious.
EDI - Never used her much either, her Overload/Incinerate/Decoy overlap a lot with your own tech powers. Although I suppose Tali/EDI would be useful on an all-synthetic mission.
Vega - I switched him out from time to time with Garrus in my Garrus/Liara setup. Carnage hits like a truck and he's pretty durable, personal preference really whether you want to use him in a tank-like role.
Kaiden/Ashley - Didn't have Ash on my playthrough and tbh I didn't use Kaiden much so can't comment too much here. I suppose he could swapped out for Garrus and his Overload could help against shielded enemies if yours' is on cooldown. Could also probably use his Cryo Blast to set up Tech shatter combos with your Incinerate, but with 200% recharge speed (easily obtainable with lightweight SMG and light assault rifle like the Vindicator) I could Cryo -> Incinerate blisteringly fast as it was and never felt like I really needed another squadmate to help set them up.
As for your own powers most of my damage came from Tech shatter combos, so I would max out Drone first followed by Cryo Blast -> Incinerate -> Overload. The Freeze combo and Frozen vulnerability talents are extremely effective taken together.
There's probably more stuff I've missed but hope that helps.

I like Garrus and Liara the best for almost every class and every mission.
You could swap in Javik or Kaidan if you wanted.
Your combat only squad members aren't the greatest, but if you wanted to use one I would go Ashley over Vega, but that is up to you.
As above, EDI overlaps. Tali overlaps a bit as well.

Don't overlook Sabotage. It's great against Cerberus turrets. The Tech Vulnerability is great as part of a combo. I used a lot of Sabotage/Incinerate combos against armored bosses and Sabotage/Overload against shields and barriers.
For equipment I bought the Inferno Armor and Spectre Paladin. After that, I only carried the pistol. Never used a SMG. Pistol was only for occasional sniping, shield/barrier generators, and the occasional shot at bosses if I was waiting for a cooldown.
