Honestly, there would be mass panic. All the knowledge we thought we knew about the world would be gone.

People saying they would just go one with their daily lives... WHAT daily lives?... everything is changed. You don't even know what you are anymore, much less if or what you should eat. At the moment it happens, you don't even know if you should go outside in the sunlight... or risk walking in the rain.

What do you do for power? Do you come with a plug? Your organic parts still require food, but all the proteins and plants have all changed form as well.... There might literally be nothing for you to consume.

It would be an unmitigated disaster. Suicides, chaos, death, destruction. Probably severe political upheaval as everyone tries to put their lives together.

Whatever "benefits" we might receive from this would not be worth such a horror.
