Not really any best. I've done insanity with almost every class, but for me I prefer engineers due to the versatility of the class. Sentinels are good too if you like the biotic route. Both sentinel and engineer have overload which is one of, if not the best power for stripping defenses.

So far I've had the easiest time playing on Insanity with the soldier.

Soldier with stasis if you want an easier time against phantoms.
Wall hug and mainly use assault rifle, anything gets close whip out the shotty, i had a fully upgraded claymore that would take out banshees and brutes in like 2 - 3 shots

I just started my first Insanity run and am using Infiltrator for the first time in SP. I love the class in MP. So far it is pretty easy although it is a NG+ game with a Black Widow X.

The squad helps a lot really.
But if you don't want them Engineer, Adept and Infiltrator work well on their own.
Soldier can as well, but it isn't quite as easy since powers trump guns. Vanguard is good by themselves but much better with a squad.

None of the classes are hard if you have some idea what you're doing. For pure easiness, I'd say Adept. Just spec for 200% cooldown bonus and then warp-throw EVERYTHING. It's simple and it quickly kills any enemy in the game, whether it's a crowd of Cerberus troopers or a Banshee. Biotic squadmates are nice, but not really necessary. The only problem with that build is that it's boring as hell, since you just do the same thing for every fight. (Same thing for Nova Vanguard, which is pretty equal in terms of easiness.)
Infiltrator was the most FUN though. I just love seeing people's heads explode when I snipe them with my Black Widow. It was a nice balance of being fun without being really hard.

I agree that there isn't a "best class for insanity". Soldier and Engineer were my favorite due to the constant tech bursting
EDI and James were my favorite mates for these classes.
EDIT
I'm actually planning a "one man army" build with my engineer where I only use combat and defense drone, sabotage and sentry turret. No other powers are allowed.

Any class that can easily do its own combos will be good for Insanity... I think that's everybody but the Soldier...
Before I got a hang of the combo system, I pretty much did my first PT the way the OP described. ME3 Insanity is actually pretty hard if you start from lvl1 AND more or less rely on pure guns. However, it's ammo that is the main limiting factor in this case.

If you have good situational awareness and risk assessment, vanguard is by far the best solo-minded class for insanity. Take reave for your bonus power, and reave/charge for ranged situations and reave/nova for close quarters. Reave's damage reduction is nothing short of a godsend for a vanguard, and since it can evolve for area effect and prime detonations (which are detonated by charge and nova) you're pretty well set for survivability (between half-blast, charge regeneration, invulnerability frames, and reave DR) and damage (chain detonations). Vanguard is already a patently overpowered class, and adding reave makes the power level of the class itself skyrocket.
Adding squadmates on top of that turns the vanguard into nothing short of a juggernaut, whether it's Liara's super-low singularity cooldowns allowing for a ludicrously fast detonation turnover rate at any range with reave, Javik for slam/reave (which is practically instant death in outdoors areas) or even Kaiden for mass reaving or barrier-stripping for the main event (chain detonations). Against shielded and/or armored targets, you have your pick of any iteration of different detonations from which to pick.

Solider black widow + Reverant
Frag grenade incediary ammo, mixed with adreneline and energy drain comes prepared.
Tend to stick with ash with same layout and liara to get grunts out of cover

thanks for the tips as a multiplayer that plays only gold i don't expect the story to be to hard. after reviewing everyone's incite im thinking sentinel. looking at there powers i can't find a more balanced overall character. two biotic powers for explosions and two tech powers for bursts. and armor so the can be played as soldier types also. defiantly plan on saving for a bw.

I haven't completed insanity with all classes yet, but since it's become my favourite class with ME3 I am going to have to say sentinel teamed with Liara and Garrus/EDI. You are versatile, as in you're able to do a lot of different stuff well and you got tech armor.
But really, insanity isn't all it's cracked up to be - I recommend you just go with whatever you like the most, because insanity is real easy no matter which class you choose to be honest.

Vanguard/Infiltrator
Sentinel/Adept
Engineer
Soldier
from best to worst imo, although insanity is easy on all of them

Javik, Liara, and Kaidan are great with sentinel for biotic booms. I don't even bother with tech armor myself, since I don't like the ME3 version.
