I'm starting over again, because I keep getting the "bro" Kaiden conversation when I want the "lover" Kaiden conversation that I see on Youtube. 

I built this Shepard recently to romance Jack, but too my surprise I found that Jack's romance is pretty flat in ME3.  So I'm going to go full gay now.   

Is what screwing me up that my ME2 import says I romanced Jack in ME2?  Is this preventing me from romancing Kaiden in ME3?

nah, its fine
as long you are not rekindle romance with Jack
and visit Kaidan at hospital
you are good to go

Yeah, as far as I know, romancing a character in ME2 doesn't affect a potential Male Shep/Kaidan romance. Just make sure to bring him the whiskey (although I've gotten it without that, too) and don't resume or "lock in" your romance with Jack.

I'm currently doing a play through where I romance Miranda in ME2 and then Kaidan in 3.

It bugged out for my brother once, that suddenly Kaidan was his LI in ME1 and he had male shep. But anyways, they record those cinemas for both male/female so it was like female shep thing
