... Kinda makes me not even wanna bother with my infiltrator anymore. So far I'm just about to start Sur Kesh, and I really am just thinking about either making it into a Shotgun Infiltrator or just forgetting about it... Doesn't this completely kill the power of the Sniper Rifle in the first place?

You mean the shield taking 100% dmg on insanity? Just use energy steal or edi or kaiden overload

One shot snipers do suffer from this mechanic. Just take Black Widow, problem solved.

Widow Sniper on ME2 was probably the best playthrough ever... Its kinda sad it isn't as fun on ME3. I am planning on getting the Black Widow, though, and I have Garrus specced for Shield Damage Overload.

I didn't find it to be all that big a deal. In fact, I played the bulk of my infiltrator game on Insanity with the Mantis and Predator (the Predator was really more a decoration than an implement of war).

Most of the units in the game don't actually have more than one layer of defense, and some that do have such large layers it doesn't really matter. You can either just shoot something like a Centurion or Marauder twice, or have Garrus use Overload first. Max Disruptor Ammo just in case they started to regen a bit of shields.  Or you can use your weapon to drop their shields so they can be floated, then detonated by Liara or Javik.

But if you have the Valiant try that out. Alternatively, save your credits for the Black Widow. It takes infiltrator from "pretty good" to "ridiculous."

And don't forget that Infiltrator has two of the best powers in the game: Tactical Cloak and Sabotage.

I started a new insanity playthrough with an infiltrator just now, then I realized his powers are totally lame except cloak (sabotage has limited use) and went back to my adept.

If I were to continue with the infiltrator I'd make him a shotgun infiltrator with the geth plasma shotgun, however that takes a while to aquire which makes it even more lame.

Infiltrator performed well for me. ED meshes perfectly with cloak, and with Incinerate it's able to remove all types of defenses making it almost a one-man army. Energy drain refilling shields is too overpowered imo, since in ME3 it now affects barriers as well as shields.

Sabotage has Tech Vulnerability, which is quite good and can be used on any enemy.  And it is funny to turn an Atlas or Turret against Cerberus.

Shield gating was never an issue for me; I had a blast playing this class, and I never carried anything other than a Black Widow (saved all of my credits and bought one soon after Palaven). As others have said, you can take Energy Drain as a bonus or just use Garrus/EDI/Kaiden to overload shields, which has the added side effect of staggering them for easy headshots. Or you can just use two shots instead of one (horrors!). Really though, most enemies are unprotected anyway.

And sabotage isn't of "limited usefulness" -- whoever said that has no idea what they are talking about. It's one of the most versatile powers in the game. You get the 100% tech damage bonus, you can set up tech bursts with it, AND you can hack synthetics, including turrets (which is both hilarious and makes the Grissom Atrium trivially easy). Hell, if you really wanted, you could completely forgo tactical cloak and play as a pseudo-Engineer without making things that much harder on yourself.
