Your reasons?
Pretty much the same as you that voice alone is enough to make up for not knowing what she looks like till the launching of the Suicide mission in ME2 and the endof the Rannoch missions in ME3.
Plus I felt she should have been developed more in ME and made a LI through all three games.

I found her the most mature, independent and interesting, and I like a 'challenge'.

Because a straight FemSheps would've gotten ripped off any other way. Between Kaidan/Garrus it was about badasery. Although Thane was on par with Garrus my FemShep had no interest in being someone's stepmom. Not even going to mention the facepalm that is Jacob >_>;

Garrus in ME2/3 because he (and Turians in general) is (are) just plain -sexy-. After ME3, he may be my.. second favorite Bioware LI. Alistair takes first.. having finally usurped Carth (who is now third).
Thane in ME2 for one playthrough because a) I wanted to see the romance after having followed the development of ME2 for what seemed like forever and

At first I was intrigued by his appearance and voice.
And then I came to love his philosophy and personality. Everything just clicked for me tbh.
I've played through with a Garrus romance in ME2 as well and it's very "awwww". I do like that turian! That cute awkwardness was really sweet
I've yet to import my Garrusmancer in ME3 though, after trying to play through ME3 with my Thanemancer and seeing what happened to him, and then seeing those endings I...lost my desire to play ME3
I chose Jacob in another playthrough, and true, at first I did it "for the lulz" but "surprizingly", Jacob actually grew on me as the romance progressed.
I've yet to properly start my playthroughs with my Kaidan/Liara-mancers so my opinion on those are not complete yet so to speak.

However, once I actually talked to her, I realized that she isn't that bad. I based my entire opinion of her on her first impression, which isn't all that great. Her nerdiness and lack of social skills are endearing and remind me of myself. After the line she gives about using you for an "in depth study," I was hooked. It was just too damn cute.

I originally didn't like him at all because 1.I thought ew frog man 2. I was expecting him to be all broody and dark and an ****. That commercial very much misrepresented him.

Garrus is perfect boyfriend material; charming, loyal, confident but not cocky, intelligent, talented, funny, self-deprecating at times which only makes him more adorable, and as a plus he's a member of the alien race I find the most interesting. And 'best friends to lovers' is an angle I hadn't played yet in a BioWare game. It has more depth than the typical one-game romance, IMO.

So as soon as the confrontation scene came up, Kaidan was history and Liara would've been my default LI for any playthrough, but she became so much more especially after LotSB.

Ok, I have to admit that Liara starts out a bit of a stick in the mud - but her reactions are pretty funny in ME1.
