I've installed both game discs onto my 360's hard drive. Probably a stupid question, but does this mean I won't need to do the disc swap when it would otherwise be needed?

nope. disc swap still needed.
All it means is that your machine runs the game off the hard drive and your machine won't sound like it's trying to take off while you're playing.
