If we're to demand accounts for all races and cultures, it's going to be a whole bunch of extra characters. I mean, there are no nordinc characters, no slavic ones (Kaidans surname suggest that he's slavic, but he doesen't look or sound slavic, nor does he ever refer to anything typically slavic), no Germanic or Franc characters. The only hispanic is the walking stereotype pendejo called Vega.
I see very little point in having token this race or token that race-characaters.
supposedly Ashley is hispanic. So that's two, and I think Cortez is too.
I just don't see what would be hard about having the NPC's skin color more varied.

I agree. Its not about race, and making a token (insert ethnicity here), person. Its about the story more so than anything. They have no oblligation to include any race just for the sake of pleasing set groups of people. Besides, you can make your Shepard whatever race you want him/her to be.

The mass effect universe is oblivious to race within race. Green asari dont differ from blue. Brown turians dont differ from Grey and Asian humans don't differ from Black.

If anything, where are the Chinese NPCs? As the only nation currently more populous than India, they are a bit under represented, in my opinion. It's not a big deal, and not immersion-breaking, but I did notice it.
In general, I think the series does a good job of showing a more integrated, homogenized humanity, that has still managed to preserve some unique cultural traits.

The comic shows Vega in San Diego and Camp Pendelton. He visits his dad there too...who looks a lot like Brad Pitt. When I think of Latin Americans in Southern California, I think Mexican given the proximity.
When I say "chinese" I'm thinking "Chinese-American". Racially, she's Asian of Chinese ethnicity so I count it. If you mean from China, then that's another thing.
Afrikaner's are African by definition because they were born in Africa. If you mean Black African, then that's another thing.
