We have practically the same digestive system as a shark, and practically all life on this planet is made using Levo amino acids - still plenty of variety.
There's no reason Quarians should look similar to Turians at all. They evolved on different planets.

I don't mind the look. She was never going to look appealing to everybody; it's what happens when you leave a character behind a mask so long. People pictured her perfectly, and she came out different.
Curiously enough, if you're a Talimancer, you'd think it would be incredibly hypocritical to suddenly judge the officially canon version after you told her it didn't matter what she looked like in ME2. Oh well.
She looks fine, and I'm a sucker for brunettes. BioWare chose wisely in that the picture won't cause any outrage beyond some of Tali's fanbase.
