Do acid arrows go through most, if not all, spell defenses? What about ice and fire arrows?

The elemental damage bypasses ‘Stoneskin’... a favourite mage defence against physical attacks.
The basic idea is to stop them from being able to cast spells.
Acid arrows in particular are useful against the Air aspect of the Imprisoned Demon (WK level 2) and most vanilla dragons are prone to acid and poison damage but IMO you are better off using "Quiver of Plenty +2" endless {normal} +2 arrows for most of the game.

Sweet. Yea I've been soloing the game with an assassin and acid arrows plus poison have been amazingly effective against mages and liches.

I would use cold & acid on casters, fire on trolls, and +1/+2 on everyone else. Watch the status window to see what protections casters put up, and watch for fire/cold shield/aura of flaming death. Sell biting, and keep piercing for when you need the thaco boost.
Note that crossbows offer massive opportunities for stun/paralysing. In the city of caverns & the underdark you loot huge numbers of bolts, koa-toan for save vs spells, drow for save vs death, and paralysing for save vs paralysation. Given your poison is save vs death, you could make them save twice on one attack. Some testing may be required to make sure it doesn't roll the same save for both effects, but it would be cool if it doesn't.
