This is quite embarassing - i've actually completed BG2 once many years ago (as a pure fighter), but many aspects of the game yet remain unclear to me. now as I return to the game I feel I must have some questions answered, most of which experience-related:
1. I'm playing a multiclass character with a full party. Is it possible for me to hit level cap for ALL 6 characters by the end of ToB? If so, approximately at which point (in terms of % of progress)?
2. To make that happen, do i need to go out of my way to grind? for example, will you recommend switching party members to maximise experience gain through NPC quests?

I haven't finished with a full party of 6 for a while, and never 6 on vanilla, but here are two group's levels with tactics/ascension and the level cap remover. Bear in mind tactics adds loads of XP, and the evil group had a group of 5 for the whole of SoA.
Evil Barbarian 40, Viconia 40, Edwin 32, Valen F25 / T29, Korgan 40, Sarevok 31.
Kensai 13 > T39, Kelsey Sorc 33, Aerie M21 / C26, Jan M21 / T29, Valygar 36, Solaufein F24 / M20.
So your group of 6 might have an average XP around 5-7 million each. Depending on their classes, single & dual classes may get close to 40, multiclasses to mid 20's.

One definintely can hit the cap in a vanilla game, because there are many xp exploits. Supposedly you don't wanna use them. OK, fair point. Then all I can advise is playing solo up to PC level 2 950 000. By doing so, clear the way to the NPCs you want to have in your party (some are not that easy to join OR keep, like Haer'Dalis for example, then assemble your preferred team, and you'll notice that all newly-joined party members will have a starting xp of 1 200 000 each. A bit of advice - join each new party member after temporarily disbanding the rest, because the newly-joined members are joined at an experience value which is relative to the average party xp, not PC's xp. Meaning that if you assemble 4 party members at 1 200 000 xp, the fifth may join at 800 000 xp. What else...oh, Jaheira cannot be joined like that, so you have to pick her after you clean the Chateau Irenicus, that way she'll join at 161 000 total xp instead of 89 000, and ditch her after going out (she'll get the quest xp points from finishing the chapter). Join her as a last party member afterwards. Same with Minsc, although I don't know who wants a weakling like him in the party...
Oh, and don't complete any quests (do not pick any quest xp) while soloing up to 2 950 000 xp. It may look tedious and scary soloing without the Ring +2 or Amulet of Power, but will pay off after you assemble your team.
Otherwise, here are some xp exploits:
Drop reputation to 1, travel in the lower-right corner of the promenade, this will trigger Amnish guards to appear hunting you. Kill them. They drop good sellable items, and even some rare scrolls, some of which you won't be able to obtain soon, so it's worth it. They may also drop various potions/green scrolls, etc. I advise killing the Cowled Wizards who hunt you for 'irregular spellcasting on streets' first, because dropping rep to 3 and below disables them. Of course, provided you didn't already pay for your spellcasting license, which also disables the Cowled Enforcer patrols.
Rest in Windspear Hills dungeon level 2 or Watcher's Keep lvl 1, sleep interrupted by undead, kill them for xp.
Scribe all scrolls possible not only with party mages, but with NPC mages as well who you don't intend to have in the party. Or use the Erase/scribe scroll button again and again. After you get the Scribe Scrolls mage HLA, this turns out to be an infinite xp exploit, if you have the time.

I've got a wild mage run going where I picked up Imoen/Yoshimo/Imoen, Viconia, Edwin and Anomen and took them through SOA before adding Sarevok in TOB. I pretty much did everything in SOA and would say I'm half way though TOB + 25% though Watchers Keep. XP varies from 4.7m (Anomen) to 1.2m (Imoen, Sarevok). Viconia, Edwin and charname are all about 4m xp. edit, + some xp for inactive classes (2.4m for Imoen, 2.5m for Sarevok).
My game has BG1 xp rewards for traps/locks/learning spells but also has Ascension which might increase xp in a few places. Based on that I don't think you'll get to the cap and The Pottys 5-7m sounds reasonable. I also reckon four of my party are at a level where more xp isn't really essential.
If you're desperate to see what a capped party plays like there are a couple of exploits. e.g. in Saradush equip unlimited missile weapons and stand on the wall to pick off fire giants at zero risk and leave them with AI switched on for however long it takes to get the xp you need. Or you could just add some xp to the party via the console or Shadowkeeper.

I prefer the vanilla version so I won't be tweaking my game in any way (except the widescreen mod)
so, am I right to say that there's absolutely no way for my party to hit lvl cap without xploit and tweaking? And hence all the powergaming info on any given guide is irrelevant? :-(

Did I miss something: If you have a full party of six then why do you need to hit the cap?

...err... i don't know... there's really no NEED for it i guess. just like i don't need to play the game and what not?
but if you mean to say that i shouldn't expect to hit level cap with a full party, ok, fair enough. does that also mean i shouldn't concern myself too much with HLAs and high level spell slots?

Just as a side note, if you are playing vanilla, you get the level cap easily by auto-attacking the fire giants surrounding Saredush, as their numbers are infinite. You can set them to auto-attack with weapons like the firetooth dagger, tasheron's bow, gesen's short bow etc. then just watch a movie or something and when you come back you've gained some levels...

You start getting HLA's at 3 million XP. By 5 million XP the bonuses to your character from gaining another level are really pretty insignificant.

At least in the vanilla game. However, in an Ascension or even SCSII run, every level (every HLA) counts. Plus, if you for example are as fond of Jaheira as I am, it's good to see her with more than one seventh-level druidic slot, and for that you need 6 million xp. Same can be said about other favourite multiclasses, like Aerie.
Killing Fire Giants comes tooooo late in the game. IMO exploits which are executable in chapters 2-3 are best. If you want something more of a fair fight, pick on Tahazaar in Watcher's Keep level 3, but don't kill him, just wait while he summons infinite amount of demons for you to battle. If you wanna rest, retreat and re-enter, he'll keep summoning more. Same can be done with Ka'rashur.

How much you get from extra HLA will depend on your group and play style eg. A tanking blade gets huge advantage from UAI, IBS and Spike Traps are always worth having but my melee Cleric of TALOS, shrugs and takes Potion Making because he just doesn’t need anything.
To answer your first question yes it’s possible to hit the cap with six party members (being multi-classed is irrelevant to how many experience points you receive ) but you’ll have to do every quest & grind for it... Only you can answer whether or not that’s worth all the effort.
Tips for grinding;
1 Go to spell hold early with as many NPCs as you want to keep throughout the campaign... If you want Imoen then swap Yoshimo for her.
2 There is a room in the mind flayer lair that spits out endless flayers (one at a time) for 9000 exp a pop... You only need 1 elder blood to do the Drow city so skip them for now and come back down later on.
3 Play an evil party that does the occasional good deed... Despite what they teach in Sunday school, Crime Does Indeed PAY!
