As Arishok being a title/name there must be more of them. Just like 'Sten' is a name that is a sign for the function that particulair Kossith has in the Qunari.
Sten is a title, like lieutenant or corpreal. You fight a sten in the Qunari uprising in DA2 and it has horns.
An unhorned Kossith has special meaning and place for the Qunari, but it is not its own title.

Doubt it...they will probably just elect the kossith best suited to fill in the role of Arishok.Hell it could even be a human or an elf,since the Qun doesn't discriminate against ones race and always elect the individual best suited to fill in whatever role the Ben-Hassrath(I believe it's them if not correct me) deems them worthy of.Though we have yet to see any qunari soldier being something other then a kossith so i'm not quite sure how my theory holds up.

You know, after DA2, my feelings are hurt about Sten. He comments about the Qunari invading Ferelden, and how he wouldn't seek me out means that I'm not worhy of killing.

The Arishok may be easliy replacable by other suitable big-horned Kossith.
