ME2/3...Thane and while I know that BW didn't technically consider Thane a "real" romance in ME3, it didn't matter to my FemShep, he mattered to her.

I have male Sheps that romance Liara, Miranda, and Tali, but not my main Shep. 
I had a female Shep that romanced Kaidan in ME1, but never got her ported to ME2 before the HDD died and I lost her.

1: Liara for Manshep, Kaidan for Femshep.
2: Tali for Manshep, followed closely by Kelly Chambers (god damn I wish she had more scenes). I guess Garrus was alright for Femsheps.
3: Liara definitely got the most scenes out of most LIs. Garrus had a great romance. Tali's romance is also quite good for Mansheps, but Bioware annoyingly added her halfway through the game.

ME2 = None. (It was just too silly to me. Apologies to the writers.)
ME3 = The only one that wasn't so outright awkward IMHO was how they handled Cortez and broShep starting a relationship -- yet that's from someone unfamiliar and biased by stereotypes. (There's no such thing as a truly open mind, but I try.)
