Actually 3-4 dreadnoughts are stated to be able to overwhelm the shields a Sovreign class Reaper, but that is still horrible ratio to have considering that at best the fleet has some 200+ dreadnoughts (and I underline that is at best, as it is not taking into considereation losses allready sustianed over the cause of the war) so the odds are not exactly in our favor, even with the mightiest fleet.
But the Reapers most certainly wont be flying out of that battle without some serius losses.
Oh sure the Reapers might loose some. We see at least one get badly damaged in the finall attack on Earth in ME3. But it's really just the Powel doctrine at work. The Reapers attack with overwhelming force. So its not just that Reapers are hard to kill, but they can dish out way more punishment than any other force in the galaxy. Basically the are killing something like 10 or 20 of your biggest ships for every one of them you manage to take out. It's a numbers game the Reapers would always win.

As for the oversimplification, it may be so because they were announcing their arrival for 2 games with big words and in ME3 you actually get to see what they can do. And you are like "What!? That's all it takes to destroy one?" I anticipated more direct fights (and more fights) with Reapers - not only ordering a fleet to bombard from orbit or having a tresher maw deal with it.
Consider the logstics of that. We have thousands of the huge big time Reapers in space. So you have to sneak inside each one, kill the legions of gross space zombies that are no doubt living inside it, get to the eezo core, somehow NOT get indoctrinated and turned into a turnip (which so far seems impossible), blow the core and get out. And then what? Do it again to the next Reaper? And again?
Not going to happen. Would take too long. You'd have to either overwhelm the Reapers with conventional force - which the galaxy simply doesn't have - or you find some other kind of solution that can defeat either all the Reapers in single stroke or some method of killing large groups of them at once. Either way, getting inside one and blowing it up is a pretty labourous process.

I sort of do. Worst part of the game by far.
Excluding the goodbyes, which were kind of nice. Only ones I really liked were Liara and Garrus' goodbyes though, the others were pretty mediocre.
