The only thing in that scene that isn't noticeable without stopping is that the last two shots are accompanied by flashes of white just as the fades to white, but only lasting for under a half second. Compared to that the Predator change is like being slapped in the face with it.
I take it you mean while just playing the sequence, and [edit:] not looking at the data from different physical angles.
After watching that snippet again, I'll concede that there is a little more time right before where you can partially make out the difference in the gun---perhaps three or four seconds, and you're fighting with the scene's darkness to do so. Again, like I said, I really appreciate the plausibility of this, but I'm also looking at it from the standpoint of BioWare wanting an audience to actually perceive this clue. Had we seen Shepard's hand dropping or flinging the Predator afterwards, I'd be keeping my pragmatic lips sealed about this.
