In terms of War Assets/EMS, if you want the best and worst possible war assets, you should save the council. Why?
For the best, assuming you save the Salarian Councilor, Valern (the original one) gives you the Salarian Third Fleet as a thank you present potentially worth 133 pts while the replacement councilor only gives the STG Reaper Task Force which is worth 70. When you combine this with the Destiny Ascension (70) and the total Alliance losses (-100), it's easy to see why the original council is worth more.
For the worst you have to arrange things so the Salarian Councilor does *not* live. This means that neither Thane nor Kirrahe can be available in ME3. In that case saving the councilor costs you a net -30 (-100 alliance + Destiny Ascension +70).
There are minor conversation changes such as Udina's convo in his office changes slightly, and according to Udina the new council is a bit more hostile towards you. You can even call out Sparatus for not believing you earlier and he'll say, "we can rehash the past later if you like". Sparatus (the original) also indicates that you've saved his life 'twice' now, Tevos comments that misttrusting you hasn't helped them (and that in turn helps you convince VS not to commit suicide by Shepard), and Valern will remark on shepard saving his life if you cured the genophage (essentially saying that you're an idiot but you did save my life so.....)
That's pretty much it as I recall.

Sacrificed the Council in ME1 and denied to be reinstated in ME2, and yet I still get reinstated in ME3. I was majorly dissapointed.

That's an asari Cruiser (you can see pictures of them as War Assets if you get them), they're similar in shape but lack the "top" tower (having 3 prongs instead of 4) and are smaller. It might be an asari dreadnought, again just a scaled up Cruiser model.
The Destiny Ascension is much, much bigger. And it looks awesome when it swoops in at the end there.

Hell yeah she is. That lady is gorgeous.
Personally I always opt to save the Ascension because, y'know, biggest damn non-Reaper ship in the Galaxy. If it hadn't been wasted evacuating the Council in ME1 it might actually have done some serious damage to Sovereign.

I just rewatched both cinematics (EA's "official" version is one with a dead Council, apparently) and the ship shown is pretty much exactly the same size in both versions. The DA does have the tower in the second version to mark it, but otherwise they didn't actually attempt to distinguish it between each version. Kind of pathetic really.

Really, saying something and spurring me to research this just made me slightly more disappointed at how Bioware handled everything about the endgame after Cerberus HQ. Same size and just added the tower? Give me a break.

They're not necessarily best buds, but they do treat Shepard better than the New Council that never got to know him and have their lives saved by him. I also got the impression that the Old Councilors are better leaders than the New ones, based on some of the dialogue by Bailey and some codex entries. And of course, you get the Ascension. I like the end cinematic with it much better than the one without it.
honestly the fact that the original turian council member finally treated shepard right instead of constanly putting him down and calling him mentally unstable kinda after shepard saved his life made saving them worth it anyone agree

Oh God this... I did a lot of stuff in ME2 thinkin' there would be consequences in ME3 and there just weren't.

It surprises me how many people don't seem to note the difference in dialogue in this situation, but I can tell you that the difference is noticeable if you pay attention.
It would be good to see the difference but I just can't not save the council, purely because I know that it results in humanity taking over with their "human led Council", which only 26 years after discovering the galactic community is stupid beyond belief.

I think that only happens with a Renegade playthrough. With more Paragon points there are replacements for the dead counciliors, plus the new human.
I agree with the stupid part.
