Because it would affect what sort of backstory you can and cannot give them? And the amount of detail you give a character affects how much depth they have. The more depth a character has, the more engaging your readers/players are likely to find that character.
How much more interesting was Kaidan because of BAaT? How much more interesting was Zevran because of his backstory where he was willing to do anything and anyone to get close to his targets? Isabela and Aveline are two of the most interesting DA2 characters, but they neither one have to hide their orientations. Isabela is unapologetically bi (thus is workable under BioWare's "free love" policy) and Aveline is unromanceable and so can be unapologetically straight since she only needs to please the demands of the story not the PCs.

I think Traynor and Cortez being gay and not bi made them more interesting. It was a great scene where BroShep got turned down by Traynor. Her homosexuality added to her character in a very well done and tasteful way.

Obviously do not have anything against ******/bisexual people, but you can't destroy the concept of characters just because a dude would like to play female Shep, but also would like Tali/Ahsley/whatever to be romanceable. You can't have it all, especially not at the cost of the uniqueness and traits of the characters that make Mass Effect so great.

You see I honestly don't think it matter either way NPC aren't people they are stories and the sexual oriantation of the story is just a minor part but I do object to type casting character. For example saying that as Kaiden is a quiet character so its alright for him to be bi but Garrus is masculine so he couldn't possibly be bi is really quite judgmental you are assigning sexual preferences specific personality characteristics which are not sexual.

Kaiden is never really interacting with girls either though. He says it himself if he asks you out as MaleShep. And I'd actually think a Garrus Romance would be ok for MaleShep. I just don't know how they would make it work because it would just seem too forced for some characters. Of course they could write in these romances and make them have some sense but in the games current state I can't imagine the characters I listed being bisexual. Except maybe Tali. But if she would be bisexual I would have to make sure to kill whoever she would date in the suicide mission just to make sure there's no cheatingpoundoffleshaa wrote...

I understand the arguments supporting it, as it gives the most people options using as little resources as possible and makes the potential interaction with the characters basically equal for all playstyles. But ultimatley I think a set of diverse, defined sexualities for characters is the better approach.
But really it's not a big deal to me, anyway. The meat of a story is still just as strong and the characters are just as fun and interesting no matter how this is done. I did not care a lick about the sexuallity of the romancable characters in DA2 when the Qunari invasion happened or when Isabela was cracking amusing jokes. I'd rather not it be that way, but there's no point in making a big deal about it, I think.
But devs shouldn't do it simply because fans want them to (which is also how I feel about Kaidan). The DA devs did it completely of their own accord and that was their creative right, but I highly doubt the ME team thinks the same. Unlike the DA team, they had to be pressured into simply including gay romances at all.
