Not all that weird at all, I hardly noticed it in DA2, mind you that might be because I was too busy fuming about the recycled material.

It'd be incredibly weird.
First off, sexuality doesn't work that way. It's got nothing to do with what is socially acceptable. People in the future won't all be bisexual just because it's culturally acceptable. They may be more accepting about it, but the majority of people are still going to be heterosexual. The game loses a huge mark of realism by suddenly having everyone want to dry-hump anything with two legs.
Second problem with doing this is that it reduces the meaning of the most basic character choice, that of gender, to nothing more than a cosmetic difference. FemShep and BroShep have different interactions with characters based on their gender, just like people in real life do. If everything that moves is fair game for a romance, you'll see less differences in character interactions. People are already annoyed that their choices amount to little more than a numerical score, and you want to reduce such a key decision even further?
GTFO. Seriously. You would make the player's decisions matter even less than they already do. You clearly don't understand what the game was supposed to be about.

Just like in real life, characters in Mass Effect should have a defined sexuality. Some are heterosexual, some are bi, and some are gay. No one should be Shepardsexual.
