The satisfying ending in ME1.
I also miss the RGP elements from ME1 that got removed in ME3. ME2 had a good mix between action & RPG.
I miss the Mako and Hammerhead too

Being able to click on your companions to get dialogue while on a mission
Normandy SR1
Mako *sheds a tear*
Huge amount of exploration and dialogue choices
There are plenty of things I DON'T miss from ME1, though, including:
Clunky combat
3 dialogue choices all giving the same result. Seriously?
Companions being practically dead on the Normandy, unless you initiate a conversation.
Elevator rides. The random dialogue/news messages on them was fun, though.
Extremely repetitive environments for the side quests.

Mako
Fighting Thresher Maws in the Mako
Interesting Elevator Dialouge
Being rich,
Even though I was loaded in ME2 and 3. Seriously people, how do you not have a lot of credits in ME2 and 3? It was easy as anything to achieve my mass fortune.......
Interaction with Keepers, even though it wasnt much
Normal Citadel
That sums it up at the top of ma head.

Xbox having DVD and no-hard drive models has a part in this unfortunately. It's been holding back many games this generation.jreezy wrote...
Some semblance of non-linear story progression.

Shepard.
Wrex.
So many choices. The banter, exploration, a vehicle (though Overlord blew the Mako out of the water), but I miss playing with Wrex the most. I almost always ran with Wrex and Garrus. That's a holy trifecta right there.

Killing Maws in the Mako
Scary Reapers
Cyro Grenades/and the overall ammo upgrade system
and I even liked the old-school sci-fi graininess
Tali in Colossus armor
