And personally, I actually rather miss the elevators. They were ridiculously long for future elevators, but I liked the dialogue and news reports.

Things I don't miss:
1)clunky combat
2)three dialog choices with the same result

Always on Radar HUD (seriously how does Rockstar make this work in every massive sandbox game they make)
A Citadel so big you could get lost in it...

Well, at least overheating was replaced with something else so it's a matter of preference. Unlike completly removed vehicles or mini-games with nothing to make up for itMidnightRaith wrote...
I liked the overheat system. Would have liked to see that either fixed or made into a hybrid with what we have now.

It wasn't perfect but I would have liked them to refine it rather than remove it.

Example;

Illium, from Mass Effect 2. Yes, this picture looks beautiful. But to me it just looks like a different kind of Citadel. It is like a futuristic urban city. I can relate to it.
ExoGeni buildings on Feros from Mass Effect 1. Sure, sci-fi skyscrapers just like the first one. But they're above the clouds, on fire. Like there's something hidden and amazing below that layer of clouds. This, and the description of the planet, paints an image of an otherworldy sci-fi set of structures in the midst of a mysterious ecosystem. This was the first picture that really caught my eye in the series. It speaks volumes to me that I've never seen in sci-fi.

I don't think I really miss anything from ME1, but that doesn't make it any less unique and must-have.

ME2 had better mini-games. ME1 had "press the button we tell you to" for everything, and locked you out of certain crates if you didn't have the right skill on someone in your squad. FFVII had better minigames than ME1.

For me the citadel on the orginal Mass Effect felt massive. The versions in ME2 and ME3 felt like being in a closet to me.
I pefered the elevators over the loading screens.
I liked the biotics from the orginal mass effect.
I liked the mako and exploreing planets.
I liked the open space on the planets and felt my sniper rifle was useful. SOmething about pulling to a spot from a base and picking people off standing outside.
For me I felt the tech skills like overload and sabotage actually did something. I use overload/sabotage on a trooper in ME 3 and they act like nothing happens to me. In the orginal mass effect they stoped shooting. So made it useful to me for things other then just fighting geth.
I do miss the inventory in the sense I could change my armour and weapons without haveing to go to a space station and buy everything, Shame they did not try and organize it better instead of trashing it.
I liked being able to chat with squadmates and talk to them other then on a ship.
The thing I miss the most is the story telling. The feeling I got something done even though the bigger threat is still comeing. Was the only time I felt I was getting Shapard's story.
I felt the combat just need better cover,better AI for my squadmates and a way to tell them were to go. Oh well life is full of could have beens and wasted potential. Like SOE it is clear to me Bioware wants a new customers and I am not part of the demographic they want.

I also miss all the conversations had during the elevator loading sequence. They expanded the story a lot.
Lastly, having lots and lots of guns and armor to buy and choose from, even if they all looked the same.

Which brings me to my next point: the ending. The ending of the first ME was one of the best endings I've seen in a video game. Pretty damn epic.
Also, elevator news reports and convos, 3 dialogue choices, immersive and compelling story, that 'whole new world' feeling you got because the atmosphere of the game just captured your heart and mind and made you want to fly to the stars. Yeah. The first game was great.
Then ME2 came along and blew it out of the water! Favorite game.
