The fact that it felt like a Bioware title and that Bioware actually made it without being interfered or forced with deadlines
what do you miss the most from ME1?

The reapers being mysterious and scary and exploring. I spent an hour looking around on Ilos because it was so georgeous loved the art on all the planets.

The elevator rides, the ability to change everyone's armor, the Mako (man, I loved that thing), and the way Kaidan looked.

ME1 was a masterpiece in its time, but ME2 outdid it in every way, in the natural evolution of things.
Except for exploration and weapon management I'd agree with you. In ME1 I had weapon presets prepared for various scenarios (Crowd vs Heavy Sniper Rifles for instance) I can't do that in ME2, or even ME3 really. In ME2 I can't customize my weapons so I'm forced to alter my playstyle to my loadout rather than the other way around.
Number one thing I miss most is the exploration. ME2 and ME3 just feel too closed in, I never feel like I can really go anywhere.

Religious Ash the soldier (not glamour model).
Also, the more in-depth characters. The branching discussion trees.

Not in terms of customization, powers/abilities (not only there was more of them but they also influenced more aspects of the game outside of just combat), exploration and plots of side-quests. The combat in ME2 was better, but the overall gameplay was more varied and deeper in ME1.Shallyah wrote...

I miss the feeling of vastness.
I also liked the elevators, since they made things feel more contiguous, but it always bugged me that I had to put my weapons away to ride them.
I kinda miss the unlimited ammo, but I tend to be a better shot if my ammo limits are reigned in, so meh.

full dialogue wheels
Mako - I loved this thing and was sad when it was removed in ME2
Virmire, all of it
overheating weapons
unlocking mini games
Probably more but that is what comes to mind

Mako
Ash's appearance
Being able to speak with Ash
Moddable armor
Edit: and of course, ending that felt heroic

I certainly don't miss the MAKO......worthless primitive junk
I was overjoyed to see it's corpse in ME2;)
I do however miss:
-more hubs
-exploration
-more non-essential conversation
-squad banter.....

I miss the planet exploration (Yeah yeah I know there's no way to do that much exploring with a Reaper invasion going on).
I miss that you could just talk to any of your squadmates as much as you wanted while on the Normandy, even repeating dialogue (and some of it romance banter) when you felt like it. Now, if you don't save before the dialogue if you want to see it again, you're basically screwed. They kept it in ME2 but completely destroyed it in ME3. Now we get one liners and non-relationship based lines that don't even change if you romanced them or not. That is the one that gets the biggest sadface from me.

Kinda funny how the things that are being cited in this thread...
... were things fans were in a frothing rage of hate about at the time.
Time and rose-colored glasses do wonders, it would seem.

Customization.
From ammo mods to ability choices I miss how unique you could make your character.

A coherent plot.
Failing that; the sense of exploration (which made the universe seem grand and alive, as opposed to self-contained a dreary).

I miss Wrex as a squadmate. I also think ME1 had the best main plot, but I prefer the character writing in ME2 and 3.

Mass Effect succeeded in actually advancing the over-arching plot; Mass Effect 2 was a bunch of fan service and "go here, shoot this, retcon, retcon, retcon".

Exploration....the fact that you felt like one small speck of sand on an enormous beach of a galaxy....unlike the sequals where they hold your hand and point you down the hallway you're supposed to go down in order to get to the next fire fight
