 I made a Shepard on Xbox 360 Mass Effect 3, is there a way I can extract the save file from Xbox and use it on my PC version of the game instead? I'd like to pick up where I left off from Xbox.

You can try Gibbed Save Editor for ME3. It can read both kind of savegames and write them as well. You can load a .xbsav file and save it as a .pcsav; I think it will work.
