That might not be too far off the bat in all honestly, at least gameplay wise.
I view the gameplay of a game to be the vehicle for getting from one story section to another, and I feel ME3 did a very good job with that aspect.

I do remember and it's even here in this thread, explained by Patrick Weekes, you just have to search for it
But I guess you're referring to what Mac Walters said regarding the Rachni. In the EC you do have quite differing outcomes, just depends on if that is enough of a change for you or not.

No one is quite sure if it's the last one, but many things point towards it being the last SP DLC.
As for the endings, there's only speculation. BioWare stated that they will not add upon the existing endings, but some choose to take this information and speculate the exact opposite; That BioWare is saying this to trick us.
Truth is, that for now there's only speculation.

Speculation is this:
The next DLC, may or may not, have something to do with the Citadel. This is based on some files that include the "Cit" abreviation for several levels that are not currently in the game.
Last week, A bunch of devs and Mike Gamble, had what appears to be their last ME3 design metting. That has most believing that there will be no more SP DLC.
Wheither or not the supposed "Citadel" DLC is the last, it is not clear. Bioware has always held the belief that they are done with "endings." I take that to mean that there will be no additional content that "changes" the endings as they currently stand Post-EC. They could add to it, maybe, such as war assets action (my opinon) or more explanation, but again, that is more community hope than fact.
Mike Gamble, tweeted that there is more to come... a very vague statement, but it is a statement (actually a response to a twitter question).

Well they might be done with the "endings" (Priestly keeps refering to them in quotation marks), but this doesn't mean that they're done with the trilogy's ending and that there won't be non-ending related added by DLC, i.e. content that builds around the endings.
Especially, considering that Gamble tweeted once that they will not add codex entries on how the Crucible works/what it does exactly in the end.
