Well the official PAX South schedule posted on their page didn't have Bioware on it, but they were present. So you can take solace in that and hope for something at PAX East.

1) The game wasn't originally called Mass Effect.

The original codename for the project was "SFX," short for "Science Fiction X." And they used that name for so long, everybody grew attached to it, and didn't want to change it. "We went through a naming process, and people kept saying, 'Why don't we just use SFX?'" says Hudson. But he and the other creators kept resisting using that name because it seemed like they were too attached to it — and the clincher was the fact that SFX was already the name of a long-standing magazine.

 

Instead, they chose Mass Effect from 10 different possible names, because it related to "the dark energy that we used to drive a lot of the technology. It inspired things about tipping points and being able to influence large things, and it was a name that we didn't hate. That's kind of how you know when you've got something," says Hudson.

Star Citadel.. well, that makes the ending to ME3 make more sense in the grand scheme of things.  Man, hearing these other names for Mass Effect is so weird.  Obviously, we were sold ME and grew attached to it and completely absorbed it.  To think it could have been anything different, I dunno.  Also, SFX was just horrible, it also stands for soundeffects.  I can't play a science fiction game named after soundeffects!

Listening to the first ME soundtrack for the millionth time. It's the only thing keeping me sane waiting for any info on the next ME and/or announcement of a trilogy release. Should have kept my 360 dying to play the series again.

PC mustard race!  I recently picked up star wars republic commando.  So many old games from the 360 or even original xbox days are available on steam for incredibly cheap or even free at times.  I originally beat the trilogy on the 360, but I've got the trilogy (and all dlc again) on the PC.  I enjoy it more on the PC, personally.  I understand the couch, but the flexibility/longevity offered by PC is awesome!

I did the same thing, PS3 → PC and never looked back. I still play on the couch (well my bed) and use a controller with xpadder. ME2 and 3 work really well with it. ME1 is a bit tricky but the combat is pretty annoying anyway. I normally casual my way through 1 for the story. Wish there was native support. I might actually try it on harder difficulties if there was. I'm no slouch, I play 2 & 3 on hardcore.

BW generally do their own panels at the Bioware Base, I think.

 

Unfortunately that schedule is usually posted on a short time before the event. I think last time it was only 3 or 4 days before.

I've started a new ME3 playthrough a week ago. I installed most HR-texture mods available and play in 4k downsampled to 1080 at 60fps. Glorious.

It's too bad that the UI and subtitles/descriptions don't scale with the resolution.
