Haha, it refers to situations that are pretty unlikely to occur but still might need to be tested just in case (if that makes sense). It's on the "edge" of probability in terms of stuff that players are likely to do.
So maybe there's a bug where the game crashes if you save 456 times in one playthrough - 99% of people won't have that many, so the ones that do would count as an edge case.
I remember there was some sort of bug in ME3 (?) where the game would crash your console if you left it on the MP menu for seven hours in a row, or something.
It doesn't necessarily mean it's unlikely to occur. All it means is it is at the extreme value of what is needed. In this case it sounds like there was someone(thing) too wide or too tall to fit through a door. That scene might be needed in every play through, 100% certain to occur, but is still an edge case if it is the tallest and widest.
