That written, I am always in favor of boss fights rather than big-scale horde setpieces, as they just resonate with me to a greater extent, so I don't even hate that it's there. I just can't say I enjoy the fight.
Otherwise, I just want more ME1-esque scenarios with some content, where a nice cinematic conversational showdown exists for its own merits.

I like boss fights that require me to solve a puzzle. Maybe something in the environment will help me defeat it, or maybe there's a trick to exposing a vulnerability. I like when, if I'm patient and plan my attacks well, I can minimize damage to myself and my team while striking the enemy at just the right moment (I like to play glass cannons, so that's probably part of it...).
I don't know if that's a very popular opinion, though. And in general, I enjoy puzzle solving more than combat, anyway. I like to feel clever, haha. Admittedly, it must take a lot of play testing to hit that sweet spot between frustrating and Zelda-style "hit the obvious glowing jewel 3 times."
It's been quite some time since I played through Mass Effect, so I don't recall the boss fights or the typical mechanics of them very much.

In any case, I wouldn't say Mass Effect's bosses have ever been akin to what you described, really. But I'd like to see more of them in Andromeda. Unfortunately, it seems the idea of individual "bosses" seems far less popular in many genres than it used to be, even as obvious outliers such as From Software's output buck trends to the max. So I'm not too hopeful I'll get that, and that's okay -- tis just a personal desire.

I'd really like to see boss fights akin to DAI boss fights. Make it actually matter what your squad composition is. I never quite felt it was important. ME1 really didn't matter. ME2 was better, and ME3 - since there were such few characters, but they all interacted with each other (biotic/tech explosions), it was really your overall experience (dialogue, etc..) that would make your decision.
Personally, I'd like a bit less interaction with tech + biotics. Or if there was an interaction between the two, limit it to certain abilities. It got old fast in MP when you'd prime a target, but engineers would use incinerate, and you'd just sit there spamming something to detonate your biotic. Maybe if there was prioritization.

Well, then I guess you are a solo platinum player, because it mattered to me in ME1 and ME2 who I took along when playing on insanity. In ME1 biotics were an absolute requirement, so Liara and/or Kaidan with Lift were a must. In ME2 it would depend largely on my class, but I can tell you that Grunt never made the cut, and neither did Jack. Tali was only useful against Geth. Miranda, as the only Sentinel in the bunch, OTOH, was almost always on the team.

It wasn't just working out how to do it. Once you did that you had to repeat the process more than half a dozen times. It was pretty silly.
I also thought Marauder shields was stupid. You play an entire game with basic combat mechanics, then you come across what looks like a regular enemy, but the way you defeat it is because it has a hidden weakness to the basic combat mechanics, that you would actually be better off not knowing.

I really do not want to think about what it says about me as a person when that was the FIRST thing I thought of when I first saw it.
EDIT: since we are talking level design and shards, funny thing - the shard in Hinterlands, in the area with the dragon, on that rocky spire (YOU KNOW THE ONE) I have only ever managed to reach when drunk. It is the sort of platforming my brain is incapable of perfecting when lacking intoxication.

Yep, describes my canon somewhat accurately!
Also I'm mobile now but can confirm what was just said about being drunk and shards. For me, I generally need a couple of beers in me before heading to the Forbidden Oasis. Just as a rule.

The answer to how difficult things need to be changes depending on the exact objective of a mission, sequence, or encounter. But regardless of that, the objective is never to screw the player over. The goal is always to present a surmountable challenge that makes use of mechanics in the game. It's not hard to make changes to make things unfair, but that's just no fun.
This reminds me of something I've wanted to ask: Do you guys always turn up the difficulty curve towards the endgame regardless of story? I mean, if, say you had a story where the strongest foe is beaten in the middle of the game, would you then still try to make the enemy encounters harder towards the end?
I know that's a strange question, but it's just to ask whether there's a part of Bioware that dictates where the story can go because of difficulty/gameplay requirements, or if difficulty/gameplay is always based on plot.

Quite. This is something far too many players fail to grasp.
Too many players have this very wrong idea that to get a certain reward in the story, the player should have to be this smart, or this skilled, or this perceptive. The player has to 'earn' it. Or he has to 'pay' for it. Because otherwise, why would anyone choose not to take the reward? It's something unfortunately played up by advertising and video game media left and right.
And that's just not a reality that stands up to any scrutiny. The real reality is not only is this product ultimately leisure, but leisure designed to be beatable by a very wide range of people. Including countless people of sub-average intelligence and skill.
It's always the protagonist that 'earns' things in the story. Never the player.
