I am going to be playing through the game on Insanity difficulty. Which class, squadmates, weapons and skill builds should i have to make it the easiest possible?

It doesn't matter, Insanity isn't a challenge at all.

But if I had to choose the easiest class - Infiltrator or Sentinel

For squadmates, I'd go with Liara and Garrus.

Infiltrator can dish out enormous amounts of damage, and if you take Energy Drain as a bonus power, it's almost unstoppable (Cloak + ED + shoot). Sentinel I say because it's a more durable Adept, you can still set up your own biotic explosions, but you get tech armor to further help you survive.

Liara is good if you spec into low-cooldown Singularity + Warp for detonating lesser mobs without protection. Quite handy. Garrus is good for his Overload to strip down shields, and if you give him your Black Widow, he can one-shot lesser mobs (provided he's specced right).

I beat the game as:

Adept
Engineer
Vanguard

In the middle of an infiltrator playthrough.

All four on insanity. All classes were amazing.

Well, since I didn't get these responses too fast I imported one of my soldiers. Using an Avenger X, Black Widow X, Claymore X, Carnifex X, and Tempest X. Most likely going to buy the Paladin and Wraith as well to try those out. Also have my Shepard and all squadmates essentially maxed out in their exp trees. Been doing good so far, at the side mission between Tuchanka and Sur'kesh right now.

Doing a Vanguard right now on Insanity.  Do you have the At-12 Raider Shotgun? great gun, awesome rate of fire. It's light and powerful like the Wraith only higher rate of fire. I recommend it.

Depends on your style and preference. You like Biotic explosions? Do you like tech burst? or more CQC?

I don't have the AT-12, playing on Xbox standard.

At least one biotic specialist with you when facing Cerberus.
And a tech specialist when facing Geth.
Reapers? Just shoot 'em.

Well any of the following classes works: Adept, Soldier, Engineer, Sentinel, Infiltrator, Vanguard

Oh right..that's all of them. I almost forgot that playing multiplayer Gold makes singleplayer insanity look like a cakewalk.

Tip for you: Solo a gold match on MP with 1 of each of the enemy types (C/G/R). If you can do that, you can handle insanity easily on SP.

It's really not that hard just take cover more often...the end part to me was more of a challenge on hardcore than insanity. Idk? I'm about to start a new one fresh at level 1 insanity soon..maybe infiltrator haven't used that class in SP ever.

I did it with my ME2 import adept and completely blew through the game. Biotic explosions everywhere!

I recommend using an infiltrator. GET THE BLACK WIDOW! This things is an absolute beast on an infiltrator. You can fire off one shot with the cloak buff, fire off a second shot while its recharging, then cloak again and fire off a third shot. I've killed a Harvester in three shots with this setup. Granted, I was playing on Normal. Their sabotage ability is great in single player and will save your a** against cerb turrets

Vanguard(nova guard), Liara, Jarvik, = Easy Mode, I charge into a massive group, hit Power Use(pause) as I am charging then select my target for Liara's warp or Sing depending on shields etc, Hit Jarviks Dark Energy or what ever, let the pause go BOOOOOOOOOM everything dead.. just hide from turrets and blast with the Prothean Rifle.. This is How I easy mode Insanity.

Seriously?

I reckon the percentage of people who have beaten the SP on Insanity that have actually solo'd a Gold MP game is exceedingly small.  Besides, solo'ing has a lot to do with knowing those maps and spawn points, which isn't all that relevant for SP.

In any event, I think one of the easier classes to use on Insanity is probably Infiltrator.  Vanguard is probably the most powerful and while not quite as forgiving as Infiltrator, it is a lot more forgiving than it was in ME2.

But you could do it with any class.  Probably the one you are most comfortable with would be the best choice.  As for squad mates, it sort of depends on mission and what class you are, but Garrus and Liara are useable for every single mission.  If you have Ashes, Javik is also good.

Play a silver match.

Warning: SP will get boring.

SP insanity is easy if you regular on silver difficulty in MP.

If you want to run through the game super easy mode, just combo biotics. Liara is easily the most useful squadmate because of her instant cast singularity and warp.

Insanity is quite easy in ME3, I'd say that vanguard with Liara/Javik is as easy as it get's.

Will replay it as soldier or enginer - hoping for a more interesting challange there.

Its not challenge or anything if you know hot to play the game. I recommend that you buy the Energy Drain and only thing that you need is sniper.. You can pretty much use anyone you want. Myself used Garrus and Liara.

One of my favorite & quickest insanity playthroughs was on an adept who specialized in quick & powerful biotic explosions. These are all the facts that you would need to pull this off to maximum effectiveness.

Shepard:
Weapon - Paladin x (you want 200% CD speed if this wont work for you)

Powers :

Biotic Mastery - Rank 4 (either), rank 5 (damage & capacity), rank 6 (Combo Mastery)
Throw - Rank 4 (either), Rank 5 (Detonate), Rank 6 (Double Throw)

Squad:

1st member: (A must have)
Liara:

Warp: Rank 4 (Detonate), Rank 5 (either), Rank 6 (Recharge speed)
Pure Biotic: Rank 4 (Recharge Speed), Rank 5 (Duration & force), Rank 6 (Squad Bonus)

Kaiden or Javik: (Either/or)

Kaiden - set up however you want but have a rank 6 Reave.
Javik - Set up however you want but have a rank 6 Dark Channel

The main goal of this set up is to maximize the damage & CD speed of biotic explosions.  You'll want some manual control of liara for this. This set up will have you spam liaras warp first then your throw right after which will detonate the strongest biotic explosion in single player. Additionally you want javik or kaiden because the second throw projectile "may" hit their Dark Channel or Reave target setting off a second explosion.

The Biotic explosions will trigger a 40% faster recharge speed through Shepards biotic mastery. Liara's squad recharge speed will add another 10%. 200% recharge speed bonus from weapons adds to 250% recharge speed. All this added with the base bonus to recharge speeds allowed for spamming these large & powerful explosions pretty much every second.

The easiest for me was Novaguard, but only because they are brokenly overpowered in SP. CQC Adept (focus on Shockwave for explosions) was the most fun. Sentinel was fun once I respec'd for melee damage.

Liara specced for Singularity and Warp primarily (biotic detonations a priority for the trees)

I've said this twice already tonight, but spec an Engineer Shep with Slam. You can set up biotic detonations for Warp, or set them off on Singularity. Turrets and Drones all the while busting up the foes, and Overload with Neural Shock for good measure.

Final squaddie should have a good ammo type to share, and be able to set off tech bursts, as Shep and Liara can each set off biotics.

Valiant sniper rifle and a Locust/Hornet SMG can still allow an almost full recharge bonus if maxed out, so you can still spam abilities.

Alternately, load everyone who can carry an AR with the Particle Beam from the DLC, and give Shep the clip extension so he/she never needs another weapon. Since Liara is surgical with the SMGs, just give her the heaviest hitting dmg dealer, or get her the fastest pistol with the highest DPS.

Yeah, Insanity was a snooze compared to the last 2 games, but could be more specific in how you broke the game mechanics and still get it done.

I did Insanity with an Infiltrator + Widow X

I used James and Garrus with a Particle Rifle with Armor Piercing Ammo for everyone...they just melted the hell out of big baddies.
