Couldn't the explosion knock Shep back into the same magic beam that got him/her up to the Citadel in the first place? Why is that so hard to believe?

Yes, because that sounds f*cking stupid and would improbable to the point of absurdity.

to be fair....nothing else made sense.

Why Frodo didn't throw the ring from eagle?

First, as someone mentioned, Eagles came AFTER Ring was destroyed.

Second, it's a nice example. If you remember book right (or at least watched da film) - Frodo LIVES. And you can hardly call this moment or rest part of the book "hollywood happy ending".

That's because some english Professor knew that in order to show heroism and sacrifice author does not need to murder his character with a fire blast. That's actually a brilliant example of how epic journeys (books, novels, films, games) should end - no pink glasses and fluffy kittens, but a lot of bitter-sweet moments, beautiful and true. B5 was very close here, and I expected something much B5-ish from ME3.

because Sauron's big fat eye can see through everything and anything so will see it coming from 1000 miles away. I think archers, and those flying things could deal with eagles if prepared

Haha! True Image IPB
Improbable to the point of absurdity seems to be the theme of the ending

I am ok with a lot of things ... however just walking into something that is on fire just takes the cake for me . Shep is shooting it one point and there are small  explosions so he/she knows  that they are doing something to it . Yet they  keep walking right into the fire. There  is hand waving and reading IT theory and all of that . However even with all of I don't see walking into a dang explosion .  I know it should not bother me so much but it does . Shep does not know the citadel is going to "blow up" along with it . So there is no reason to do that .  For the people that stated maybe Shep just wanted to rest . S/he does not know this will really work. And if it does not work he could as still done "something".

What would have been great is if Destroy was NOT given to you as an option by Star Kid.  Instead it was the "Screw You,  I'm ending this my way" dialogue option, where Star Kid went 'NoooooOOOOOOoooo...' as you shot up the controls and caused the Catalyst / Crucible combination to self-destruct.  That would have made sense, and been symbolic, and pretty satisfying I think.

That ALMOST would've made one of the endings work.

Instead, Shepard walks into the explosion because ... well because:

Its to represent how Shepard's brain cells died or shooting it from a distance was too video gamey...we need to move...deeper...derp.

Just because the citadel blew up after the tube was destroyed, doesn't mean Shepard knew it was going to blow up. For all he knew, it could of just broke the connection, blew a few wires and that's it. The catalyst could of been lying also, so how did he know he was going to die 100% from the resulting fall out.

but if shepard would from the distance, and then got sucked in space again, they could re-build him again, it would've taken ass long time but hey in the end we would've gotten the happy ending.
