Holy crap! I didn;t realize until a minute ago... the Mantis is the ONLY gun that Bioware did NOT monkey with through all 3 games! It sounds exactly the same!!

Saber. It sounds like a purely mechanical gun on springs and levers. Steampunk gun.

edit:  Also, people have heard turrets when the Hurricane is firing, and lastly, I routinely mistake the Krysae for an Atlas.

I'd have to say Saber. Sounds a bit like a pneumatic bolt driver. I think it's badass.

I also like the sound of the Geth SMG, it reminds me of a Minigun revving up.

Not technically a gun, but I love the flamethrower sound the vorcha have. Haven't played a vorcha yet myself, but it took me a while when playing with them to try and figure out what in the world sounded like a jaguar roaring. LOL

I don't have a particular sound I like, but there is one that sounds ridicolous. I don't know which one it is, but it sounds like rattling a can of raw peas or something. Sounds hilarious.
