Ignoring the crappy ending, how do you truthfully rate ME3?

8/10 total. A slight improvement from DA2.

Also, I give games their final verdict on how much I enjoyed them. Yeah, the lack of customization was there, and yeah the fetch quests and appropriate tracking of said quests is apparent; did that take away from my enjoyment of the game? No. Do I wish they did things differently? Some. As an effort from Bioware, I stand by my score sans ending.
With ending? 7.5ish. It effects what I feel, but doesn't change the 30 hour roller-coaster I just got derailed from.
All that aside, I've played 1&2 5-6 times, and on their scale I would be wrapping up my third or fourth runs right about meow (like I'd planned since I got the release date)....I finished my second with no will to keep going.

They get seven points because this game did achieve perfection in combat and atmosphere, music and graphics and more. Lately I can't get through a play through because I keep replaying the first few missions because they are so thoroughly enjoyable. The game is truly awesome in many ways, unfortunately that does not include any part of the plot in any way, shape, or form. I just watched my YouTube video of me2 ending and i have to say - it's far more glorious than The entirety of me3.

Ending aside, there are still a number of issues which set the game back for me, even on the first run (where I tend to ignore many of them).

Even setting the ending a side there are number of problems that annoy me about ME3. The auto dialog severely limits your control of Shepard's personality. The ME2 cast is reduced to cameo status with only two members actually having importance to the story. The neutral dialog option is MIA. The eavesdropping side quest mechanic is off putting. The quest journal is an abomination.

While the combat is the best, we only fight against Cerberus, Geth and Reapers, which makes some of the game play feel abit repetitive.
The game feels incredibly linear, and the plot sometimes forces my Shepard to be what he's not (i.e. mourning for the kid in particular out of everyone else who has died)
There are barely any side missions, I am not counting those lazy fetch quests.
the dialogue wheel gets confusing sometimes, as in sometimes options on the left side of the wheel continue the conversation or open up other options (I still haven't made the illusive man shoot himself yet)
Less companions than me2, understandable but annoying, didn't like Vega, he was only interesting for one conversation in sparring but that was it. It also seems I am missing out on an entertaining squad mate, to bad he was day 1 dlc.
I am not saying it hasn't got its good points. Theres Tuchanka, Rannoch, drunk Tali, Multiplayer etc.
overall I say its a 7 out of 10

Yeah, this is how I feel with ME2 now let alone another ME3 playthrough. Why bother when the expected epic arse-kicking is reduced down to Shep having to make three decisions that go counter to everything that came before it and just left you feeling cold. Even now I'm still waiting for my fourth option where I get to kick the Reapers in their space fruits and head off to recapture Omega so I can have some wild blueberry craziness with Aria.

for a hyped AAA title from a well know developer, ME3 turned out to be a flop with fans.
tuchanka was worth it, but the rest of the game is bug ridden and filled with bad writing and i felt
like i was being forced to care about the characters and situations.

The missions were really amazing; usually emotional or well-written, while the side missions sucked (besides the N7 missions) as they were 90% fetch quests.
The squadmates really suck. It's ME1 + Sexbox -Wrex + James. EDI was a terrible idea imo, James is like Jacob as you forget he's there/don't care. Tali and Garrus are good characters (I have a personal distaste for Tali, but she's good and should stay). Liara is as boring and annoying as ever. Ashley/Kaiden doesn't even have proper dialogue aboard the Normandy. Javik is good, but not everybody has access to him. Seriously, it's hard to enjoy other playthroughs of this game because I'm always using Garrus and Javik/Ashley because I can't stand anybody else. Every single ME2 character is tossed aside that should have joined you (Miranda, Grunt, Legion shouldn't die as the choice should be Geth (Legion) vs. Quarians (Tali) as squadmates, Thane should have been cured and not forgotten about). It irks me as my reason for not wanting to replay is for my distaste in the squad choices. In ME1 I liked Ashley, Wrex, and Garrus, which leaves me in the same situation but I don't mind it as much for some reason.
Allot of autodialogue and some stupid things like Shepard being Earth-centric, only allowing to care about Kaiden/Ashley, not able to agree with the Illusive Man ever, ect. It seems way too streamlined and way too rushed of a game. It's fun, don't get me wrong, but not playing through it seven tims worthy like ME2.
The multiplayer is loads of fun, and I'm loving all of the DLC that's coming out for it. I'm surprised by how much I'm enjoying it, actually. It's not perfect, but it's definitely fun.

The Citadel is bursting with atmosphere, the Normandy feels darker and more suited to the tone of the game, squad members have their own lives, dialogue and voice acting is mostly excellent, choices are not always 'good or evil' (due to reputation system), writing is mostly excellent, all of your previous squad members and acquaintances return, gameplay is more action-heavy to fit the tone, your choices are reflected and the context behind missions can dramatically change.
The actual plot is pretty simple - the Reapers attack Earth in force, while also attacking other areas of the galaxy. Since Earth is hit the hardest, and humanity is the species chosen to be truly harvested into a Reaper, Shepard attempts to unite a galaxy and build the Crucible to hopefully end the war. I can't find many genuinely narrative shattering plot holes in the main body of the story, but there are one or two niggles and mysteries that are never explained directly.
Overall, I found it to be a thrilling, emotional ride that stands as high as its predecessors. And, yes, I prefer those fetch quests to the mind-numbingly half-assed side quests in the first game, as I have found out from my recent playthrough of the whole trilogy...

Without the ending: 7/10
I enjoyed Mass Effect more for the story than the gameplay, and I felt that ME3 lacked that a lot. Sure many aspects of combat were improved and I enjoyed that, but is that what made Mass Effect the series it was? I wanted to feel what I felt when I first played ME1. It was like escaping into an alternative life, but ME3 just didn't make this happen. The ending took away any replayability (haven't played it since my first playthrough) and that feeling where none of your choices really matter makes ME3 such a repulsive game.

But then, especially after playing ME1 abit again, the autodialogue is extremely disappointing, not even on Insane difficulty it is anyhow challenging, barely any sidequests, exploration etc.
So I'd put it on 8/10, the worst of the 3 games unfortunately only getting alot worse with the ending.
