I like anything Grey Warden-y, but I think a "gold" Orlesian coin piece would be neat. Maybe with the face of the Aveline on it (the 'Knight of Orlais' one), or Divine Justinia.

In a more general BioWare sense: something that I can use to decorate my bookshelf or desk at work that isn't so overtly nerdy that people would see it and automatically roll their eyes.

-Cassandra's research. A book of everything she compiled on the characters from DA2, and anything relevant for the campaign in DA3.

For physical items, Diablo 3's USB soulstone is one of my favorite items in recent memory. Other than that (have to keep the consoles in mind):
1. A game themed controller
2. A lunchbox (ala Fallout 3 collector's edition)
3. Bobbleheads
4. Statue / Action figure
edit: Art books, maps, and similar items don't do anything for me.

Soundtrack ona disc.
Some kind of badass big poster, preferably in the style of Star Wars - with all the characters looking badass.
Kirkwall key ring. Or any of the new cities of DA3, say "the keys to the city of Val Royeaux", but literally.
A wallet. Why not.
If the new protagonist is going to have any specific characteristics, i.e. arm tattoo, give us them tatoo sleeves or summin'.
NO COMICBOOKS.

I think a lot of people might be unhappy with "canonizing" the protagonists even in a small way like CE statues. With the gender (and race in Origins) issue ... I don't think that would work for Dragon Age. From poking around these forums I know that folks are especially attached to their (very heavily customized) Warden.
I'd be cool with a statue of an NPC though - the fans could have a vote on whatever handful of characters BioWare picks out.

Small things like Morri's ring, Alistair's rose as a pendant, a Joining pendant, a Tevinter Chantry Amulet...
Cloth maps, artwork & soundtrack
And a TOOLSET.

I really like the idea of balanced scaling weapons or armor, or other items that are simply fun to have and use regardless of your in-game level (special equipment dyes, in-game pets, etc.). Another great idea I've seen suggested are season passes that give you access to all of the DLC for the title. I'd definitely pay extra for that.
I also appreciate premium packaging such as tin cases, but it's not a requirement so long as there's good content to be enjoyed.
As far as extra treasures are concerned, I like art books and soundtracks. I have no use for statues, posters, or other physical trinkets. Perhaps two different collector's editions would be a good idea? One for people who just want a little extra, and one for people who want all the more expensive items like statues and such.
Edit: I wanted to add a note on in-game pets. I was really disappointed in the robotic dog from the ME3 collector's edition. I thought it was going to be a usable/interactive character like the mabari was in DA, but it just walked around in the hangar with very little interactivity. It was pretty underwhelming. The mabari in both DA games was pretty awesome though.

For example if Alistair was in your 'future hypothetical title' you could release an Alistair themed Collector Edition including some of these items:
A statue of Alistair.
His Runic Worry Token.
His Mother's Amulet.
A T-shirt with Alistair on it and maybe one of his quotes on it.
Concept art of Alistair
All the Collector Editions could also have set items such as a soundtrack from the game, a map, concept art of locations.
You could do this for all the characters in the game, that way there would be more choice for fans and in a way their collector editions would be personal to the gamer. Whether or not your able to do this is another matter...
