I'd love to see something personal, like the above mentioned pendants, or a nice little displayable emblem or shield of the grey wardens. Something only a fan would appreciate. Action figures are awesome but really general, you can buy them anytime, same with the maps, although pictures on canvas are really nice.

Otherwise, I tend to like the full-sized fantasy replica swords/weapons from TV shows and movies, but I'm not sure DA has any iconic weaponry.
Or things that are practical, rather than sit on the shelf. A letter opener in the shape of a sword, for example.

To echo the illustrious bear, a Golden City snowglobe would be wonderful (with dual city facades - one side golden, one side blackened, and maybe a split globe design so that sparkly bits rain down upon the Golden City, while little dark specks fall on the Black). Not too long ago, I had wistfully wished for a plush darkspawn, or a cheese knife with the symbol of the Grey Wardens etched on the blade.
But any amulet or ring of note made into an actual wearable accessory would be lovely. As would the the essays and journals of Brother Genitivi in printed form.

What I would like to see included with the collectors edition would be a book with more history and facts about important characters and their concept art. It would be something good to give to the players since the people who preorder care about all of that information.

Figures can be nice but I would be more interested in a figure of a character rather than a monster IE not a dragon or something like that.
I always like funny/amusing/absurd stuff too, like maybe printed letters/notes from the followers. Imagine reading a letter from Isabela or Varric

I do, however, love DA enough to sport some kind of DA-related pin or pendant, as other's have said - like the Joining amulet or maybe a phylactery. If I wasn't wearing it I'd have it proudly hanging on my car's rearview mirror.
I also, like others have said, love DA enough to rabidly devour any extra pieces of lore and would totally love to have a DA tome on my bookshelf. I'd love to have "Hard in Hightown" or a collection of letters between characters we love, maybe some un-encrypted Grey Warden missives, or tales from legends we know only a little about - like Andraste or Garahel, or some of the Dalish legends.
Definitely no dragon statues, please! - Skyrim already did it and it wasn't great, in my opinion.

Otherwise, I like small, useful things. One example of a collector's item I really liked was the USB key that came with the Diablo III CE and rested in a smallish base shaped like Diablo's skull. It was relatively small so adds less clutter to the house while providing some material decorative/nostalgic value I can keep on my desk, and the USB key is useful in of itself and had the bonus of having the older Diablo games on it.
I don't know if something like that would be easy to do for Dragon Age, but I'd love to have something similar from the DA universe. A USB key could have the soundtrack and/or concept materials on it, too. Another example of a CE item that might be useful and small that I can think of is something like a letter opener shaped like an iconic in-game weapon. I would definitely use something like that.
I'm personally not usually into the big statuettes and bulky material things like that some CEs include because I don't have space for them. I'd rather buy those things separately as merchandise later on if I really like it.
EDIT: I also second a bunch of the other ideas up there, like the Joining Chalice shot glass, replica book, and pendant/pin/etc.
