You have to delete the characters from your HDD manually. To do that, exit the game, then go to My XBox -> System -> Memory -> HDD -> Dragon Age: Origins. In there, you'll find your saves. Delete ones you aren't using, and you'll be able to create new characters.
Personally, I would have liked to be able to delete them in-game.

I edited my above post, but it's not showing. You don't have to delete the game from the HDD; just the characters you're not using.

However, the saving system isn't that transparant as you wish, because it has a ****load of numbers attached to them, what I ADVISE is to remove all auto-saves, and then look upon the save of your character's name, if you happen to have two same names for two characters, look carefully upon the location stated so you can delete the proper one.

Actually, the string of numbers can be read pretty easily. For example, I have an auto-save that has this string of numbers:
20091212072130
Now, I'm just guessing, but for me, this breaks down like this:
2009-12-12-07-21-30
2009 is the year the save was made. The next two numbers are the month and day (so December 12th). Not sure what the 07 is, but 21-30 could be read as 21:30, which is 9:30 PM. That's about right for when I was playing.
Of course, this is all guess-work. I could be completey off-base.

No i don't think you're wrong, that looks like either a pretty damn solid assumption or a really extra-ordinary co-incidence. Personally i just saw "string of random numbers" and got frustrated, good work on the de-code lol. Seriously though, a 2009 title with no in-game save management, wtf, backwards. My hard-drive is full so i use a little memory card for actual game saves and dropping to the dashboard every time it fills up gets old quickly, might be helping me avoid the memory leak tho so perhaps Bioware did it this way with a "lesser of two evils" type reasoning behind it.

Date-time format is pretty standard for file naming in order to offer save lists in proper time order. If you didn't do this, you'd have a hard time telling what save was made when.
However, there should be ingame management, of course. Note that Edge of Reality is working with Bioware to do the console versions; it isn't Bioware themselves, per se, at least for the consoles.

It's stupid, how the hell am I supposed to remember which save was created at what time when I have 35 save files?

Another problem with the saves I have is if I turn off my x-box the clock resets and instead of the saves being sorted by time played (like most games do) it goes by my x-box clock so all my old saves will be considered the new saves, basically I never press the "resume" button I always have to find my save and load it unless I leave my x-box on for days on end.

Your Xbox resets its time? Mine doesn't do that when the power's out/unplugged or turned off... And it's one of the original models too. Sounds like you have a problem with the Box. Or cracked it open and messed with something. =P

Usually the timestamps are stamped to the second. So maybe it's 07:21:30?
Tho the time on your xbox might be different from realtime.
And we all know this game easily keeps you playing for 6 hours straight.

Yeah, that resetting part sounds troublesome, some games use your Xbox360 dashboard time like Fable 2.

@th3warr1or:
You shouldn't have to remember too much except the character name. Use different names for different characters, of course, or you'll have trouble.
;; The list order is the same as you see in the game itself, though, because the game also uses date-time order (most recent at top, oldest at bottom of list).

If you keep your x-box hooked up to the internet (Aka X-box Live) it won't happen because x-box live will automatically fix your x-box clock, but I only plug mine in when I need to download something or gonna play online, for single player games i keep it unplugged.
