Adepts are the true biotic caster class. Sentinels are kind of biotic engineers and so have some tech skill and some biotic powers. Vanguards are a mix of soldier skills and biotics. If you've already played a Sentinel and you don't like Vanguard then Adept is what you want. FYI Infiltrator is a mis of Soldier and tech skills, Soldier speaks for itself and you already know Engineer.

I would try Vanguard (haven't played one myself). Every other class you play ends up being a cover-shooter class with a damage ability you spam and maybe some extra shields. Vanguards charge into the enemy and attack.

I've played all six classes, and Vanguard is definitely my favorite. Enough combat skills to charge right into the enemy with guns blazing, and enough biotic skills to send them flying from afar. For extra skills, I'd recommend sniper rifles in ME1 (you could do assault rifles instead, but a really good pistol practically becomes an assault rifle with Marksman) and Slam or Fortification in ME2.

Adept: Tosses enemies into the air, pulling, throwing and shockwaving them accross the battlefield. Has warp that is effective against health, armour and barriers, and singularity which traps enemies for a period of time. But be warned, higher difficulties mean that the adept must use guns to take down protections before they can use their ragdolling powers.
Vanguard: The aggressive close ranged charging bull. Can also aggressively shockwave enemies and yank enemies towards them. In addition the vanguard can either freeze enemies or set them on fire through shooting them.
Sentinel: A tank that can take a lot of punishment thanks to tech armour. In addition, the sentinel can use warp to remove barriers and armour (also doing damage to health) and can use overload to remove shields. Throw is a useful power for when enemies get too close. Cryo blast freezes enemies.
Versatile and durable being the key words here.

The Infiltrator: Master of cloak and dagger type gameplay. This is Mass Effect's answer to the rogue. Snipe from the shadows or kill enemies close up with tactical cloak. You can take over synthetic enemies with AI Hacking. You can set enemies on fire. Add to this disruptor ammo (electricity based ammo) and cryo ammo, then you have a very powerful class.
Also time slows down every time you look down the scope of a sniper rifle. This is not affected by cooldowns either.

Engineer: Now this is the ultimate tool box of tricks. Set enemies on fire. Check. Freeze enemies. Check. Remove shields and shock robots. Check. Hack robots. Check. Spawn a drone that will provide some distraction taking the heat of you. Check. The engineer both rivals sentinel in terms of versatility and it's drone can really add some much needed survivability (wich can challenge the added hit points from tech armour).

Soldier is the ultimate gun's blazing, gung ho class. Don't care much for biotic and tech powers (why don't you care for those by the way?), well none of this matters. The Soldier has an ability that slows down time allowing you to shoot faster and with more accuracy. You have concussive shot which throws enemies backwards, does damage to shields and well that's it. You have ammo powers. Incendiary ammo, cryo ammo and disruptor ammo. So being a soldier is pretty sweet if you love having an assault rifle, shotgun, sniper rifle and pistol equipped all at once.

Don't thank me. Thank Christina Norman.
