Is there any purpose for Gold, Silver and Iron Rings? I know there's some gems I'm supposed to hang onto, should I just be selling rings with no enchantments?

Sell 'em as best I can tell. In a pinch wear them to reduce your inventory if you have no magical rings.

I saw somewhere that there's a reason to keep Garnet's. Is that true b/c I've been thru the Dwarf bit and couldn't find any purpose. Some of the others I gave to the dwarfs at my camp afterward but Garnet's weren't one of them.

Check out barterner in Gnawed Noble Tavern, you need to do few errants before you get more quests
