There is a good range of weaponry to choose from. The problem is that so many of them are comparatively totally useless in comparison to better choices that the game doesn't present itself as having a wide variety of options, so much as having a jagged progression of 'Beginner weapons to the one or two weapons in each class that are gold-viable.' Snipers have the Black Widow/Krysae, and everything else might get you kicked from gold lobbies. Shotguns have the Claymore and Geth Plasma Shotgun. You see a Graal Spike Thrower or Reegar every now and then, but the Reegar is such a risky weapon that it can get you kicked from Gold lobbies. Pistols have the Carnifex and Scorpion. SMGs - aside from the Hurricane which arguably behaves more like an AR should - are generally carried only to inflict ammo power effects due to their high rate of fire, and Assault Rifles have had a bad reputation all along because of the way full-auto weapons are punished by game mechanics. Carrying an AR on many classes that isn't a Saber or Falcon is an immediate kick-vote from at least one person in a Gold lobby - and the Saber and Falcon are not typical ARs.
So while there is a good range of weaponry present, it is difficult for me to say that there is a good range of real options, simply because there is always the one or two non-N7 weapon in each class that is considered 'Gold viable' and the others are forced to languish once the high-grade weapon is upgraded because they will earn you a swift kick from most random Gold lobbies.
I do feel that there are weapons that feel every niche and level, including some that players never anticipated to find a niche for. 'Oddball' weapons like the Scorpion, Reegar, Krysae, Falcon, and Geth Plasma Submachine Gun add variety to each weapon class beyond its 'mainstream' usage. The problem is, again, that there are realistically far fewer options than it first appears because of the 'Gold viable' mentality of many players who tend to ignore the majority of a weapon class and punish others for using them by refusing to let them join games.
My personal favorite weapon is still the Revenant. I simply feel like it is heavily handicapped by requiring one of the mod slots be devoted to an Armor Piercing mod, and require AP or Incindiary Ammo on top of that, to pose a marked threat to anything protected by armor, which is a problem that most full/semi-auto weaponry currently has.
