It definitely feels that most niches (at least that I can think of) have been filled, with perhaps the exception of good rapid-fire shotguns and good accurate SMGs. I'd like to see more projectile-based weapons, but lag becomes an issue with them so they might not work out so well.
Favorite weapon is the Valiant. It feels very much like a finesse sniper--can't really OHKO bodyshot reliably, but its damage values are such that headshots get you just over the OHKO line. It feels really good to be rewarded for aiming well.
Close second is maybe the Claymore with a smart choke, for similar reasons, except you can take out Phantoms with those headshots before they get a chance to get all dodgy. Also, I'm on the PC, so the reload-cancelling puts you in an almost hypnotic rhythm.

Yes, from the ones I've tried out on different characters and classes. I'd argue that if there's a problem, it's upgrading them via the RNG or even getting a rare that you want. A welcome addition was the Gear additions for upgrading weapons, powers, skills, etc.Derek Hollan wrote...

I don't think there can be a favorite weapon if you alternate between classes and characters, since many of them match up well with a particular class/character. So fav would vary on the class/character being used. But the two most commonly used are the Valiant and the Carnifex. Runner up would be Hurricane.Derek Hollan wrote...

I hate the idea of rares and ultra rares just being upgrades/better versions of regular weapons. It is very important that they have distinguishing features and not just pure numbers - in essence, that they feel different to use.
@2 Pretty much.
@3 Claymore, Hornet, Geth Plasma Shotgun, Carnifex, Falcon (love the crowd control), Mattock (no Harrier though).

I'd place myself in the "I take the game somewhat seriously, but not as seriously as the hardcore gamers" category, and here are my thoughts.
1) Range of Weaponry - There are definitely plenty of weapons to choose from, although I'd say that about 10-15% of the weapons are top notch and worth using on a regular basis. I will admit that I don't have all of the weapons available yet (still don't have the Saber, Scorpion, or Harrier), and I also haven't done a real weapons test of every weapon I own.
2) Weapon for every Niche and Level - I'm not quite sure I understand this question completely, but I'll give it a go. Obviously rookies won't have access to as much equipment as the rest of us as they haven't bought very many packs yet, but I'll give you my ideal scenarios:
For rookies learning to snipe, start with the Raptor. That's where I started. It's only an Uncommon item, so fairly easy to unlock through Veteran packs, and with the lower zoom-in power and larger clip capacity than your standard sniper rifle, it is somewhat forgiving until a player gets the hang of hitting the target every time they shoot. I was dominating Bronze matches with my Raptor for quite a while before I moved on to my new favorite, but more on that later.
For rookies learning to use shotguns, the GPS would be ideal. The auto-aim will help them hit their targets and a successful hit will stagger some enemies giving them a longer chane to live. You don't have to be right up in the enemies face in order for it be useful, so the more tentative rookies will still be able to help out as they are learning their limits of charging into a group of enemies. Unfortunately for rookies, this is a Rare item, so it is a bit harder to gain access to.
As far as pistos go, the Carnifex is the best all-around pistol, so I would reccomend that pistol to any level of user looking to utilize a pistol. While the Paladin is does do more damage, it only holds 3 shots, and when one is playing on Silver or Gold, having the 6-shot capacity of the Carnifex will be important. Of course, the carnifex is a Rare item, so the average rookie will just start with the Predator and move up the ladder to the Phalanx before finally (hopefully) unlocking the Carnifex.
I like the comment about giving something to the Rookies that they won't hurt anyone with as there is obviously no friendly-fire damage done in this game. The biggest thing rookies need to know is to not shoot their comrades when they are trying to aim as they will obviously throw that off.
3) My favorite Weapon - I'm going to exclude messing around on Bronze and exclusively address playing on Silver or Gold: Typically I like to play the GI (or MQI if someone else is using the GI), and my go-to sniper is the Valiant. I can get all 3 shots in on the TC weapon boost window and it reloads so quickly that I can get another 3 shots off and begin the re-load in about the same time it takes TC to cool down. (I did just unlock the Indra, and that is quite a fun experience, but I'm still not sure I like it more than the Valint.)
If I play an AA or GE, than I will use the Carnifex as my only weapon as it does good amounts of damage and still gives me an almost 200% cool-down bonus.
I do not play the Soldier class on Silver or Gold and I rarely play the Sentinel class as I'd rather just play a true Tech Expert or Biotic Expert. I don't play Vanguards on Silver or Gold either as I can freeze Phantoms with Stasis as an AA and charging around the map can be deadly unless one is really skilled at it, and I am not.

There are plenty of Snipers, Assault Rifles, Shotguns and Pistols. Unfortunately there are not really enough SMGs. None of them are really good enough or strong enough (except the Hurricane) to be a viable choice.
They are fine as second weapon for casters but often I find they are not worth taking, over keeping weight down. If ULM worked properly, it might change. The greater problem here is there are no real submachinegun (beyond Hurrican again) to fill that top tire spot. The Hornet doesn't really cut it. At least to me.
The SMG's need some gimick weapons as well. All the other weapon types have weapons that do odd things - Scorpion, Falcon, Krysae, Kirshock and the Reegar - and those are just the somewhat out there. There are more "down to earth" ones like the Grall Spike Thrower.
A few humble suggestions:
A burst fire smg where after say 2 seconds the bullets of the last burst explode as electric damage only effective against shields (and maybe synthetics). Perhaps have a charge up ability where bullets of a burst will seek out different targets on their own (within reason).
A full-auto SMG that deals damage to both shields and health/armor (as in if a target is shielded it is dealt damage both to its health and shields). Maybe have it so that health damage is increased if the target has shields.
A burst SMG whith a charge up. At full charge up the target hit gets marked. After that all bursts fired for a short while will try to hit the target. (The weapon will give you safty to fire but getting it right will take som practice.)

I am sad to say it but yes. While, as I said, SMGs could use some love, there are perfectly good options in other weapon groups. From here on in it is probably only gimick weapons we need (which we don't really need but they are fun)

Probably the Carnifex. It is precise, has good stopping power, decent ammo supply, decent clip size. The perfect no nonsense pistol.

2. Per the above, the AR and SMG section has very few unique weapons. They're all simply bullets hoses of differing stats. We need more UNIQUE rapid fire weapons with UNIQUE traits, like the shotgun section. As for the range, there are weapons for beginners and solid niche/trait weapons after that, but as for super death weapons, again these belong to the pistol (Paladin, Scorpion) and shotgun range (Claymore) and especially Sniper range (W, BW, J, Valiant). We need better SCARY ARs and SMGs. The Prothean Rifle is perfect example. It's by FAR the best AR in the game, and it's nowhere to be found in the MP. The Revenant is also spectacularly underwhelming without full mods. A good scary weapon would work just fine on Gold or Platinum with NO mods. There are no scary rapid weapons except the Reegar.
Fave Weapons:
Graal, GPS, Reegar, Talon, Scorpion, Black Widow, Widow.

Also buff ultra rares and give them 3 mod slots. That would be very cool.
There should be anultra rare grenade launcher type weapon like the krysae and falcon. I think thats missing.
Give other classes buffs to other weapon damage like infiltrators have to sniper damage. Ex soldier ar and shotgun damage. Engineer pistol damage, etc...

Yes, but choice is predictable in many cases. To many near outclassed weapons.
Not every niche and level, but local surplus. For example, from mattock to saber \\ harrier we haven't real AR, but have two grenade launchers in this category and many partially useless AR for playing bronze\\silver, but outclassed even by pistols.Derek Hollan wrote...

I believe there are a few niches left to fill, though for what exactly it's hard to say. I know I'd love a Geth Pistol just so we had a Geth weapon for every slot so I can make a "proper" Geth with a sidearm that isn't always the Geth Plasma SMG.
My favorite weapons would probably be the ones from the DLC packs. Power levels aside, the Reegar, Krysae, Striker and Kishock are some of the most fun weapons I've gotten to use thus far. I'm all for weapons that fire in unusual ways or have hilarious effects on enemies when used. Powerful guns are great but I take great joy in fun ones.

Weapon usage completely depend on the class I'm playing. But I lean towards...
SMGs: Shuriken X, Hornet
ARs: Phaeston, Saber
Pistols: Talon, Carnifex
Shotguns: Eviscerator, Claymore
Sniper Rifles: I suck at sniping, but I find the Valiant to be the most user-friendly.

2) Not quite. Many weapons are really unbalanced (reegar too good vs. everything, krysae wiping out spawns, disciple being fairly useless etc.), but otherwise there's stuff for every level. Would appreciate some tweaks so that "bad" weapons have some niche besides "use it until you get some rares", but I guess that's why they're mere "uncommons".
3) Claymore, Graal, Javelin, Talon, Saber. Wish auto weapons were better so that I could use them as well.

Kind of. Not a lot out there that packs a strong enough punch while allowing a 200% cooldown. I think this is by design though as bio-explosion spammer with a 200% cooldown super cannon would be too broken

The Carnifex and the Widow (until I unlock better stuff). I would use the Hurricane if ULM worked. I'm not real high on shotguns. I don't understand all the Graal love. I'm sure it's a me thing though. Thousands of Graal users can't be wrong.

It also depends on the character/class I am playing and whom the enemy is. Over all, lot's to choose from.
It is always a trade off for me with the weight vs. cool down which is a big limiting factor for me as I would rather use biotic or technical abilities rather than shooting and brute force.
This is also a "moving target" question as each week we may see a weapon or two being buffed or nerfed.
So my bottom line is whatever is best suited for my character at the time and that changes as the Ultra Rares move up in levels.

There is a big range of weapons to choose from, but I'm not sure if it is a good range of weapons. Many of the weapons are simply trash mob killers and are redundant. Weapons like the krysae and claymore are important because they allow for the efficient killing of boss enemies and aren't to dificult to obtain. Boss enemy killer is must have role for any gold team to survive. Some weapons can get much better and fun to use with level 3 mods, but level 3 mods can't be used consistently.
There is a weapon for every niche. When I use a character class I can quickly find a good weapon that will compliment the classes powers and requirements. There are weapons for every level of play, but I feel that a number of weapons are too bad to use and I don't want to play with others who are using them. Low level weapons are just traps for low level players.
The Krysae is my favorite - it is powerful, efficient, lets me pick up the slack of teammates, and allows for some really fast gold runs. I did like using the black widow and hornet until critical hits got taken away from certain boss enemies.

There are certainly a few options to be had. But I'm more disappointed by how given all the weapons we have, there are still only a few effective choices. There are something like a dozen or so different effective weapons and the rest get thrown by the wayside.Derek Hollan wrote...

2. I feel like the AR catagory could use some variety, as others have mentioned. As to what, I'm not sure.
3. The Mattock certainly. It's solid and I always feel in-tune when I'm using it. The sound effect of it firing is also awesome IMO. And I'll also mention the Phalanx, I just love the appearance of the Phalanx, great looking pistol.

There is a nice variety of snipers, especially among the godly tier (valiant, widow, black widow, javelin, krysae, even though I hate the krysae with a passion). If incisor had a damage boost, it would fill a niche that none of the others filled. Even the mantis and kishock are great. (I haven't used the Indra much, so jury's still out on that. The most recent viper boost was nice; I guess viper could be used on casters on gold.
I guess at the end of the day, some of the guns feel like upgrades of others, and I don't like that. I wish that all guns just offered something different than the others (the sniper class has that really well. Mantis and viper is gold viable, even if barely, and it wouldn't take much for incisor to become so as well). I also wish all guns were gold viable, even if some were clearly more better than others. Even newbie guns should be gold viable and not made redundant by another gun (avenger is made redundant by geth AR; predator is made redundant by phalanx; mantis isn't made redundant, almost all smgs are awful, I don't know why anyone would use katana as soon as they got any of the other ones.)
My favorite gun by far is javelin. Nothing else comes close in terms of my enjoyment.
Runners up:
Eagle (there, I said it), Crusader (I know, I'm going to be a pariah for both of these statements), Widow, Geth SMG
