Great OP. I would go for 'Vigil'. As soon as i heard this five years ago, i knew i was in for something special.
I was right.
One of the best things about the ME trilogy has been it's soundtracks; each game has had it's own sound that has encapsulated fully the narrative of the game it enhances.

ME2: Suicide Mission. Come on, the whole game built up to that mission! A great soundtrack to go with it!
ME3: An end once and for all. It sums up the whole story nicely with it playing in the final cinematic

I basically agree with this, especially with the revised version of An End Once and For All in the EC where it doesn't sound like an incoherent mess at the very end (although that was and still is certainly appropriate, considering).

There are alot of great songs off the OST's (especially Uncharted Worlds), but I'm going to have to go with 'Vigil'.

Gah, it's so hard to narrow it down to one. I'd have to say that the Mass Effect Main Theme, Vigil, Uncharted Worlds and Suicide Mission each sum up an aspect of the series. Uncharted Worlds probably has the most resonance across the series for me personally.

Hands down, Vigil. It makes me both emotional and reminiscent. It reminds me of that profound moment in Mass Effect when we talk to Vigil and so many questions are answered. For me, it was the enlightened, and pinnacle moment of the first game. When it played during key scenes in ME3, I cried. The moment that comes to mind the strongest involves Tali. Without spoilers, I'm sure many people know what I mean.

Suicide Mission for me. There are so many great tracks to choose from though. The music in this series has been incredible.

Not on the OST, but I'd say it was the music playing the background when you confront Catalyst, the music combined with the epic scene of the fleets slogging it out above earth just did it for me. Still makes the hairs on the back of my neck stand up when I think about the first time I saw it.

An End Once and For All, because that's how I felt my Shepard felt, what w/ the endings etc.
