1. Spend the surgical/physical therapy recovery time creating a memorial on Earth for all who sacrificed themselves in the Reaper War - Anderson, Mordin, Legion, Thane, etc.
2. Reactivate the Geth and EDI.
3. Rejoice/celebrate with the Normandy crew - lots of drinking and partying involved on a whole number of worlds.
4. Go on a Galaxy-wide tour with the Normandy crew, making sure that some good old peace, love, and unity has reached every single significant colony and planet that was relevant to the series and help with rebuilding efforts at each stop. Would probably end up dropping off crew members one by one in their respective new found homes or home worlds.
5. Settle down on Rannoch with Tali as a final stop and wave goodbye to Joker. Then, build that house my Shep promised Tali and raise kids as my Shep acts as a part time galactic ambassador of the human race as well as a full time life partner with Tali and Father to a couple of kids.
