It would be great to see some new (or reintroduced) creatures. DA2 limited the number of creature models severely, but I'm cautiously optimistic that we may see some new ones for the Next Thing. What would you like to see?
I'd like to see the return of shrieks. The lack of a darkspawn "assassin type" was keenly felt.
And more domestic animals. You see pig carcases in the Lowtown market, but you never see any pigs. At least DA:O had chickens. So yeah, I'd like to see a few cows and sheep... and horses. (ducks)
Back to the monster theme, though, I'd be interested in some monsters that aren't necesarily darkspawn, deepstalkers, or dragons. Maybe enormous birds of prey or sabertoothed cats. Or bring back the bears.
On the subject of darkspawn, we've seen dwarven and human broodmothers in DA:O and DA:A respectively, but we've yet to see elven or kossith broodmothers. Now that we're traveling to Orlais and will be in regions populated by more elves (and invaded by more Qunari), we might theoretically encounter them. And yes, I know that kossith females don't leave home, but don't tell me that an actual army would march without support from priests and artisans. A small expeditionary force might be able to make do without them, but armies have a greater need for administrative types. And I can't imagine any army moving without its support personnel (bakers, leatherworkers, etc.).

I like the idea of different kinds of Kossith. I would also love to see:
- Barbarian tribes
- Manticores
- Griffons
- Boars ( a huge, blight-infected boar would be cool)
- Flying enemies, like harpies, giant bats and eagles
- Minotaurs, or at least a creature that resembles a minotaur. (no, not ogres)
- A hydra
- A tribe of evil elves that has been living secretly in the deep roads for generations ( the DA version of dark elves/drows)

I want to see more of the Darkspawn. In particular, I want to see something that leaves me horrified the way the Broodmother did, if that's at all possible.

I think giants and trolls would be a great addition. I would also like to see the return of the high dragon

Centaurs.
It doesn't really matter to me if there aren't any new ones. As long as there's a good cinematic/cutscene every time you kill an elite boss.

the return of griffons would be spectacular and i like Eilaras's idea of manticores. dragon age hasn't explored water based enemies, so it would be cool if you encounter creatures like krakens.more twisted and corrupted animals.

Griffons, Donkeys, horses, and maybe a boss fight against a epic bowstring.

Something I would absolutely love to see, something that almost never appears in fantasy nowadays, is mindflayers. They're a bit out there in terms of viable placement in the Dragon Age world, but maybe they could be a new pedigree of darkspawn mage, that specialise in stunning enemies with Mind Blast or some kind of blood magic mind control? They could be crazed blood mages who became so twisted that they turned into darkspawn known as mindflayers, perhaps in an effort to enact vegeance on the Chantry or their masters.
We already had a genlock necromancer, why not a hurlock mindflayer? There wouldn't be any genlock or shriek mindflayers, since they directly became darkspawn, from a small group of human mages. They would be normal or elite enemies, resembling the usual tentacle-faced monsters, though with the same darkspawn flesh bodies.

As cool as griffins would be, I wouldn't want the only extinct creatures to just suddenly come back. But I see alot of potential for a dlc taking place a long time ago. Flying on a griffin, maybe chasing down an archdemon. What I'd really love to do is customize it, name it, change it's colour, arrange it's stats. Such as flight speed and melee damage.

If they bring Shrieks back it would be nice if your character mentioned something about how loud it is T_T. Not very assassin like by telling you where they are before they strike lol.

I want something that I can't see. At most, I only see a small part of it (which that small part is immense itself or suggests something is immense in the darkness or water).
I want BWE to turn my imagination against me and let me fight something horrible that only my brain can conjure.
That and giant mosquitoes. (No. Not "Crane Flies". Actual, giant mosquitoes. Like really big suckers.)

Annoying when the forum swallows my response only to barf it up once someone responds after it.

For starters, I want Hurlocks and Ogres to look like they did in Origins. They were more frightening and ghoulish, much more in line with the "dark fantasy" description they gave Dragon Age.
I could also do without those little goblins from the MotA DLC. They were goofy.
Now, onto additions.
I would like D&D-style dragons. Frost dragons, fire dragons, gold dragons, black dragons, etc. It may be difficult to get so many different kinds in, but there should be more than a few dragons per game and side missions to hunt dragons would be awesome. It could be a great way to do optional mega-boss battles like in Final Fantasy.
Giants and trolls. Because they're fantasy staples.
Dark Elves. They could be from another continent or an undiscovered island. Some radicals to fight for elven freedom and their own brand of magic.

No D&D dragons, giants or dark elves, but you want... vampires? Get out.

Vampires are mentioned in the lore, albeit in a very off-hand way. They're not the result of diseases or curses, however; they're mortals possessed by hunger demons.
I think hunger demons should finally get their own model in DA3 to provide more variety.
Myself, I would like to see more sentient constructs, particularly of the elven variety. I find the varterral to be somewhat fascinating, since it's not what you would imagine an "elven golem" to look like. But I'm cool with any type of construct getting into the game — homonculi, Frankenstein-style flesh constructs, or just sleeker golems. (They don't all have to be bulky and made of rock.)
I think, too, I'd like to see more "beasts" in DA3 beyond deepstalkers, brontos and giant spiders. Those are all good, but I'd like to see — I dunno — hydras? Giant boars? Manticores? Those are pretty popular in France, I hear.
