Why can the maddened Cassind outside the Chantry in Lothering sense your darkspawn taint?

He's probably infected himself.

hes a hurlock emissary that went really deep in the shapeshifting tree, so naturally he can sense the taint you share

I just said on another thread--I don't think it's that hard to tell. Wardens might look like generic bad-a**es to some. But once someone's encountered a darkspawn, it's possible recognize it's a specific type of "don't mess with me."

It's an intuition, not a rational deduction, so non-crazy people won't bring it up even if they sense it on some deeper level. But if he's in a complete panic, the hint he sees in you is enough to freak him out, and he can't keep quiet.

Or, he got caught in a splatter and absorbed some darkspawn blood himself.

Also the 'mad' soldier in Ostagar, Ruck, that duelist lady in the Pearl, and several others can see you carry the taint/are a warden. The duelist lady even makes a comment on it. You change physically in a way some actually can see, I guess.

Ruck can also sense the taint in you. I think Rexxel can too (Ostigar prisoner in Arl Howe's Dungeon). Both of these men are badly tainted. Flemmeth may be able to sense something too, or perhaps her knowledge stems from something else entirely when she predicts that Ser Jory would be "insignificant in the larger scheme of things."

I still think Wardens should have glow-y, unnaturally bright eyes like the "PC character" in the CGI trailers.

I'd totally join the Wardens, risk of death or no.

shapeshifting darkspawn meant to demoralize human populations is more likely

Cool as that would be it'd just go too far.  It requires a certain suspension of disbelief that people would willingly fight you with even the slightest idea of the number of bodies you've left behind.  If your eyes glowed though it'd just be over.  You can dismiss the guy who's killed 400 people to get to you but you do not mess with the guy who killed 400 people and has glowing eyes.

You probably emit some kind of subtle scent, those that have been tainted themselves, or have encountered the taint before will be able to pick up on it. Takes one to know one, I suppose. Plus, crazy people are crazy perceptive.

Maybe he saw the Warden's Oath pendant you were wearing?

Maybe he's a shaman?  Though I don't think the other mages can tell.

Maybe he's paranoid enough that he thinks anyone who talks to him is tainted?

He was spying on you during the joining ritual?

One of your companions was pointing at you and mouthing "Tainted"?

All of the horses left the village as they usually do when something tainted walks by?

While you were out cold after drinking the blood Alistair tattooed 'UNCLEAN' on your forehead in bright red letters.  Due to the limitations of the graphics engine you can't see it in cutscenes, but it's there.

Intuition. Some people have the second sight, Chasind or not. There are some instances where people can tell your PC is a Grey Warden.

Considering that people like Ruck have eaten darkspawn flesh or have been exposed to the taint, I can understand them being able to sense the taint. Maybe the Chasind warrior was infected too. Sounded like he barely got away from them - or maybe Chasinds have a sixth sense/are weird like that.
