I would never use ammo powers, unless it is Inferno or Cryo. Sentinel can't get those without advanced modding. Reave and Double Throw have some good synergy (2 detonations is better than 1), Stasis is always solid and a defensive power like Barrier or Defense Matrix has synergy with Tech Armor.
As for weapons; As long as you're over 100% cooldown you should be fine, so that means 3 light weapons (Vindicator, Paladin/Carnifex, Wraith) or two modertly heavy weapons (Mattock and Geth Plasma Shotgun) or a huge weapon (Claymore/Black Widow + Predator).
Really any combination works, but if you want to retain the caster gameplay try not to go below 100% cooldowns. If you only want to cast Throw and Lift Grenades, you can stack as many weapons as you want on yourself.

As a caster sentinal, I used the Paladin. I did pack the Vindicator as I found a 175% cooldown essentially equal to a 200%, mostly for the OMG-no-powers-hello-MOBmoments.
I really never used the Paladin - except for headshots on a stasised phantom, or against Banshees/Atlases, so mine was scoped. I didn't see the need playing on Normal, as the game was often silly-simple, given my shield stripping abilities, Liara's singularity/stasis, and my infinite-throw.
I imagine someone playing on a higher level, where all MOBs come with armour, would rather use a weapon to assist in shield stripping, but I can't help there.
I never chose an ammo power, because I always ran with Liara for the biotic combo setups. Instead, I got stasis, which absolutely saved my butt a couple times, when I suddenly faced a phantom and Liara was on cooldown.
